I friend who I haven't seen in 10 years is coming over to my house tomorrow for lunch, she happens to be in the city on business. I only have 4 hours with her so I don't want to waste my time cooking for 1-2 of them. I need a lunch that is simple yet classy and delicious. Any ideas for lunch?

I was thinking of going out but she wants to come see the house and family too.

Get some lunchmeat from the deli, a nice loaf of bread, and chips, and call it lunch, have something for desert, such as coffee cake or cookies

Keep it simple. Think of foods you can prepare a day ahead of time. The first thing that comes to mind is a salad with sliced, grilled chicken or boiled shrimp. If it's cold outside a hearty chili or gumbo and homemade bread. Both the chili and gumbo are better made the day before serving.

Fresh fruit salad, potato salad or cole slaw are easily prepared the day before.

Have hubby grill something quick outside while you guys talk.

At our house people gather in the kitchen to talk. It tends to be more cosy and friendly. Your friend may feel comfortable doing the same while you put finishing touches on lunch. Have a great visit!

TANDOORI CHICKEN

Ingredients
1 x 1kg spring chicken, whole
2 tbsp lemon juice
1 tbsp ginger garlic paste
1 tsp Salt
1 tsp red chilli powder
oil and melted Butter, to baste

For the marinade
250g thick Yogurt
1 tsp garam masala
100ml vegetable oil
1/2 tsp ground cinnamon
1/2 tsp red chilli powder
1 tsp Salt
1 pinch red food colouring

To serve
1 1/2 tsp lime juice
1 tsp chaat masala

For the salad
50g fresh coconut slivers
1 bunch coriander sprigs
1 red onion, sliced
100g beetroot leaves
1 head Frisee lettuce

For the dressing
1 tsp cumin seeds
2 limes, juice only
2 tbsp Olive oil
pinch red chilli powder
pinch Salt
pinch Sugar
pinch chopped fresh Ginger

Method
1. Joint the chicken into 4 pieces (2 legs and 2 breasts with wing bones attached). Make 2-4 deep incisions in each piece, without cutting right through the flesh, then place in a shallow dish.

2. Mix the lemon juice with the ginger garlic paste, salt and chilli powder . Spread all over the chicken and set aside to marinate for 2 hours. Meanwhile mix together the ingredients for the spiced yogurt marinade.

3. Drain the chicken, coat with the spiced yogurt mixture and set aside to marinate for another 2 hours.

4. Preheat the oven to 200C/gas 6.

5. Put the chicken on a rack in a roasting tray and roast for 12-15 minutes, then take out of the oven and baste with the butter and oil mixture.

6. Return the chicken to the oven and cook for another 5 minutes or until it is cooked. Remove leave to rest for 5 minutes.

7. For the salad and dressing, mix all the salad ingredients together in a bowl.

8. Toast the cumin seeds in a dry pan on the hob for 1 minute until crackling and leave to cool slightly before crushing in the pestle and mortar. Place the seeds in a mixing bowl and stir in the rest of the dressing ingredients. Mix together and toss into the salad.

9. Serve the chicken sprinkled with lime juice and chaat masala, accompanied by the salad

My suggestion, make (or buy) your favorite chicken or tuna salad. Use 1 large whole fresh tomato, and 1 large whole fresh avocado (ripe).

lay a bed of lettuce on a salad plate. Slice tomato in half and scoop out the middle. Slice the avocado in half and remove the seed by first twisting off 1 half and the smack the seed with a knife and while holding the avocado in your palm twist the knife until the seed comes loose.
Fill the tomato with tuna salad and the avocado with chicken salad. Have some assorted salad dressings ready and there you go, a really elegant but simple lunch.
Serve with crackers.

You can't go wrong with a simple sandwich. By italian bread, deli meat (a mixture of salami, turkey, and roast beef), good cheese (muenster) and a gourmet condiment sauce like horseradish or flavored mayo. You can make mini sandwiches and set them up on a pretty platter; maybe have some soup and salad, with cheesecake afterwards. Not very time consuming and yummy! Good luck!!!

Homemade chicken salad on croissants ( You can make the salad tonight & just have to serve tomorrow ) Take cooked chicken breast & mix in a little mayo, celery, grapes & pecans.....easy & yummy!! Serve with soup or tossed salad & a nice dessert.......Serve with homemade sweet tea or raspberry - peach iced tea.....

Salad, and pasta from a jar. Or something stir fried(stir frying takes 5-8 min if the stuff thawed.)

Or you can order in when she comes. Like order pizza, Chinese or Indian. Or even you can order from a fancy restaurant.

I would make one of those brunch casseroles that you make up refrigerate overnight. Serve some bakery muffins and a green salad. For dessert, ice cream and Pepperidge Farm Cookies.

Quiche is elegant, yet simple -- and you can add any ingredients you like i.e.:

Spinach & Feta cheese, Smoked salmon & asparagus, mushrooms, bacon & Swiss, seafood i.e. crab or shrimp (top the pie with thinly sliced tomatoes - optional).

Serve the quiche with tomato bisque, croissants, salad or a fruit cup; and something easy for dessert like brownies or pie a la mode. Beverage - coffee, tea, sangria, wine.

make her a sandwich roast beef, provolone cheese, Munster, pepper jack. or honey turkey, baloney any kind of meat or cheese you like, tomato, lettuce etc. the choice is up to you, good luck!
