That chemical reaction is due to the active ingredient inside chillies - it is named capsaicin.

It is an alkaline that does not dissolve in water - so drinking water is about the worst thing you could possibly do. It just washes the palette clean to be attacked further more by this alkaline.

This little fire chemical dissolves in fat which is the trick - Indians eat yogurt/Raita and drink rich milky drinks to kill the pain.

You will notice that Mexicans eat breads with their chillies and plenty of plain rice, also Naan bread eaten with some curries can remove the chemical and the sting.

If you eat more spicy food, you will eventually become desensitized to this pain and it will become a pleasurable effect.

A squirt of lemon into a hot dish can make it less spicy but why do you want to eat spicy and not have the effects - these effects include a pain-reducing chemical being released into your body and making you feel better - all due to the perceived pain in your mouth.

Full cream (3.8%) milk or ice cream is the best. Chew it slowly before you swallow.

It's the fats in the dairy doing the work of breaking down the "capsaicin" which is the chemical responsible for the heat in peppers. So don't use skim milk.

I usually drink milk with a spicy dish to keep that from happening, but you can also let a piece of chocolate melt on your tongue to cool down the heat....

Time heals all wounds! Seriously, nothing REALLY helps. Milk relieves it a little, but just enjoy the burn. It does bring a euphoric feeling if you think about it in a positive way.

Fresh friut it best for me!! Try a cool mango or a banana, this is the type of fruit they serve in Indian restaurants to help with the burn!!

Any type of cool dairy product will do the trick! Milk, ice cream ,yogurt, custard, etc.
