You could make shortbread with just flour, butter and sugar and dip them in melted chocolate.

Combine 2 cups flour
1 tablespoon baking powder
1/2 teaspoon of salt
in a bowl.
Add 3 tablespoons shortening or butter and mix until you have a grainy texture. Make sure there are no lumps of shortening or butter. It should be completely mixed in.
Add water and mix. You only want to add just enough water to make a dry dough. It should only be slightly sticky but smooth. If it's too sticky add a little more flour.
Form into 6 balls, flatten and place in a shallow pan with the biscuits touching each other.
Allow to sit for 10-15 minutes. Place in 400 degree oven and bake 20-25 minutes.

Here's one that uses only milk, butter, baking powder, and flour.
*note - if you have self-rising four omit the baking powder, and you may want to add a touch of salt. My recipe calls for 3/4 tsp salt and Unsalted butter, but since you have salted you can omit the salt or just add a pinch to the dry ingredients.
2 c flour
2 1/2 tsp baking powder
mix thoroughly with whisk or fork
Drop in 5 Tbs cold unsalted butter, cut into pieces. Cut in the butter using a pastry blender or two knives tossing the mixture to coat and separate them as you work. For flaky stop when the largest pieces look like pea-size. for fluffy continue until it looks like bread crumbs. Don't let butter melt or form a paste with flour.
(I freeze my butter first and do this in the food processor)
Add all at once 3/4 c milk and blend until just mixed. gather the dough into a ball and gently against the sides and bottom of the bowl 5-10 time, turning and pressing any loose pieces into the dough each time until they adhere and the bowl is fairly clean.
Form biscuit by either balling them into 1 1/2 in circles then flattening them to 1/2 in thick, or roll to 1/2 in and cut with a small mouthed cup. Bake at 450 for 10-12 minutes. for brown tops baste with melted butter or milk.

Biscuits
INGREDIENTS:
1 cup cake flour
1 cup all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 stick (4 ounces) cold unsalted butter, cut into 1/4-inch pieces
3/4 cup half and half
PREPARATION:
In a medium bowl, sift together the cake flour, all-purpose flour, cream of tartar, baking soda, and salt. Using a pastry blender, cut the butter into the flour until the mixture resembles small peas.
Add the half and half; stir just until ingredients are moistened and dough forms a soft ball. Knead the dough in the bowl 2 or 3 times, just until smooth.
Roll the dough to about 3/4-inch thickness on a floured surface. Cut out biscuits with a 3-inch round cutter. Gather up dough scraps, reroll, and repeat the procedure until dough is used up. Place biscuits on an ungreased baking sheet.
Bake biscuits in center of a 400° oven until golden brown, 12 to 15 minutes. Serve biscuits hot, with butter.
Makes about 12 biscuits.

Brown Sugar Shortbread
2 1/2 sticks unsalted butter, softened at room temperature (Since you have salted butter, you might have to add a bit more sugar to the dough. Just taste and adjust!)
1/2 cup packed light brown sugar
2 1/4 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon ground cinnamon
2 tablespoons granulated sugar
Preheat the oven to 350 degrees F. Line a 10 by 14 1/2-inch sheet pan (with sides) with parchment or waxed paper.
In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until soft and smooth. Add the brown sugar and mix until incorporated.
In a separate bowl, stir together the flour and cornstarch. Add to the butter mixture and mix at low speed just until the ingredients are incorporated and the dough comes together. Turn the dough out onto a floured work surface and knead it 5 to 10 times, just to smooth the dough.
Reflour your work surface. With a rolling pin, roll the dough out to fit the sheet pan. To transfer to the sheet pan, roll the dough up onto the rolling pin, lift it up, and unroll into the pan. Using light strokes of the rolling pin, roll the dough evenly into the corners and edges of the pan, and roll out any bumps. (Or, press the rolled-out dough thoroughly into the pan with your fingers.) Prick the shortbread all over with a fork to prevent any buckling or shrinking.
Bake in the center of the oven for 15 minutes. After 15 minutes, rotate the pan and knock it once against the oven rack, to ensure even cooking and a flat surface. Bake 10 to 15 minutes more, until very lightly browned.
Immediately sprinkle the granulated sugar evenly over the surface. Let cool 10 minutes, then cut into 1 1/2 by 3-inch bars. Let cool completely in the pan, then store in an airtight container.
After the shortbread cools, you can dip them in the melted cooking chocolate that has been melted in a double boiler.
Lemon Bars
4 large eggs
1 1/2 cups granulated sugar
3/4 cup fresh lemon juice
1/3 cup all-purpose flour
Hot shortbread base, recipe follows
3 tablespoons confectioners' sugar
Preheat oven to 350 degrees F.
Shortbread Base:
1 1/2 sticks (3/4 cup) unsalted butter
2 cups all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
Preheat oven to 350 degrees.
Cut butter into 1/2-inch pieces. In a food processor process all ingredients until mixture begins to form small lumps. Sprinkle mixture into a 13 by 9 by 2-inch baking pan and with a metal spatula press evenly onto bottom. Bake shortbread in middle of oven until golden, about 20 minutes. While shortbread is baking, prepare topping.
In a bowl whisk together eggs and granulated sugar until combined well and stir in lemon juice and flour. Pour lemon mixture over hot shortbread. Reduce oven temperature to 300 degrees F. And bake in middle of oven until set, about 30 minutes. Cool completely in pan and cut into 24 bars. Bar cookies keep, covered and chilled, 3 days. Sift confectioners' sugar over bars before serving.

a very very simple recipie my friend gave me that i tried out a couple of days ago... turned out fantastic.
450g flour (half top flour and half self raising if possible)
350g salted butter
125g sugar
(1 teaspoon of vanilla essence if you want)
cream the butter into the sugar
slowly mix in the flour (and the vanilla essence)
bake at 180 degrees for 10-13mins (maybe longer, depends on your oven... mine took abit longer)

take 1 egg and 2 tablespoons of sugar(white)jus' simply beat these two things till one and in a baking dish put 1,1 teaspoon of the batter heat at180 degree centigrade hope it works!
