How do you know if an egg has gone off if the use by date has rubbed off in transit?

Is it when it floats in a glass of water or when it sinks?

If an egg floats then it is off - this is because as it rots gasses are given off (which cause the rotten-egg smell). The gasses get trapped inside the egg making it more buoyant so that it floats.

Test it by buying a really fresh egg and putting it in water... you'll see that it sinks!

If you put it in water and it floats it's off, always a good idea to break an egg into a separate container before adding to other ingredients if you look at how the yolk sits in the white the more the white spreads the older the egg as this is the first part to break down also if the egg is off you should be able to tell from the smell.

Without cracking them, place them in a small bowl of water. I they float they are bad; if they sink to the bottom but stand up they are touch and go and could be used in a cake but if they sink and lie down they are fine.

Works every time. I had tried it on borderline (date wise) eggs and been surprised to find they have gone off.

If it floats in water it has gone off and the further up to the top of the glass it gets, the worse it is, so don't crack it.

There are 3 types. Sink is good, stand on end or half floats is okay, totally floats is bad.

If the egg floats it means that the egg is going or gone bad, it is the Gas's inside the egg that makes it float.

A very fresh egg always sinks. I test my free range eggs like this all the time.

A fresh egg will sink in water, a stale one will float.
And do you know the test to see if an egg is hard boiled?
Just spin the egg. If it wobbles, it's raw. If it spins easily, it's hard boiled.

I used to test hundreds a day with a tester.
No tester so shine a torch through the shell with the egg and lens touching. If it is bad you will see a dark blob inside.
