I'm in a foreign country (Sudan) and I only can buy tomatoes, gerkins, cucumbers, green peppers,chillies, bitter veg (don't know the name) large onions and one type of chinese green veg. I don't know what to come out with as I'm tired of cooking the same recipie. Pls. help. Occasinally I can have cabbages and broccolis but there are real
expensive. Recipe for salad is most welcome too. Thanks.

first off to answer your question. I have no idea. second, I would go nuts, I love to cook and would go crazy if i didn't have all of my meats and vegetables that I am used to useing.

Dice up all those vegetables except for the green peppers, add some water, maybe some salt if you can get some. And I assume that you have no meat. Either way put the ingredients that are diced and mixed into a bowl with some kind of liquid (I prefer vinegar and pepper) mix it up and put it in the inside of the green pepper. Bake the green peppers on 300 for about 10 - 20 minutes. And you have vegetarian stuffed peppers.

You can always mix 3 tomatoes, half an onion, 3 cucumber with salt and pepper, 5 tbsp of vinegar, sugar and cow or goat cream.
I do this recipe in the summer. Very good.

Eggplant Parmigiana

1/4 cups olive oil
2 tablespoons water
1/2 eggs
2 cups mozzarella cheese, shredded
2/3 cups bread crumbs, dry
2 cups spaghetti sauce
2 eggplant, small, unpeeled

Heat oven to 350.
Cut eggplants into 1/4 inch slices. Mix egg and water, then mix bread crumbs and parmesan cheese. Dip eggplant into mixture, then coat with the bread mixture.
Heat oil in 12" skillet over medium heat. Cook half of the eggplant at a time in oil about 5 minutes, turning over once, until they are light brown. Drain. Repeat with remaining eggplant slices, adding 1 to 2 tablespoons oil if necessary.
Put half of eggplant in ungreased rectangular baking dish, 11x7x1 1/2" overlapping slices slightly. Spoon half of the sauce over the eggplant. Sprinkle with one cup of the mozzarella, and repeat with remaining eggplant, cheese and sauce.

Vegetarian Pad Thai
4 cloves garlic, minced
1 pound bean sprouts
1/2 teaspoons dried chili flakes
1 teaspoon sea salt
1 tablespoon unrefined sugar
2 tablespoons lime juice
1 dash peanut oil, for cooking
5 ounces rice ribbon noodles
4 ounces peanuts, chopped
4 tablespoons vegetable stock
3 scallions, the whites cut thinly crosswise, the greens choppe
5 ounces firm tofu, cut into rods
2 tablespoons soy sauce
2 lime, quarteered lengthwise to garnish

In a medium bowl, soak the rice noodles in warm water according to the instructions on the packet. Heat about 2.5 cm / 1 inch of the oil in a large wok and fry the tofu over medium heat, turning the pieces until they are golden brown all over. Remove tofu with a slotted spoon and drain on kitchen paper.
Pour all but 2 T oil from the wok, sautee the garlic, add the drained noodles and toss until they are coated with the oil. Add the stock, lime juice, sugar and soy sauce and toss well, pushing the noodles around the pan gently. Then add the tofu, salt, chilli flakes and half the peanuts.
Add all but a handful of the beansprouts and the spring onions. Turn for a minute or two, until the beansprouts have softened slightly.
Arrange the noodles on a warm serving platter and garnish with the remaining peanuts and beansprouts. Place the lime wedges around the edge.

1 cup of vinegar
1 cup of sugar
1 small chopped onion
2 or 3 sliced cucumbers, a little salt and pepper

soak them in the refrigerator for a few hours, kids love them . I do too.
solution can be re-used a few times

I would stir fry all that stuff, I could live like that happily.
