Mince pulaao
You make curried mince - fry onions with whole cumin seeds til lightly browned, add mince of your choice - break all the lumps.
Allow all the moisture in the mince to dry out.
Add some crushed ginger, garlic, salt, red/green chilli, cumin and coriander powders and a pinch of tumeric. Simmer for abt 2 mins and add 3 grated tomatoes
Add twice the amount of water as your rice
Eg 4 cups water for 2 cups of basmati rice
Add washed rice to pot, you can also add potato cubes. Simmer til rice is almost cooked
Add a handful of frozen mixed veg of your choice and some chopped coriander leaves - at this point you can also add a tablespoon of margarine or ghee (clarified butter)
Simmer til rice is fully steamed
Serve with cucumber raita and popadums

Steak and potatoe stirfry.
Cut the state in thin slices. Put a tablespoon of oil in a frying pan add the meat. Cook for a couple of minutes. When the steak is browned remove from pan. Add cubed potatoes and any other veggies you want. I use onions, green peppers and carrots. Add water and cook until the veggies are crisp tender. Drain the remaining water. Add the meat and mix it well. Add some vinegarette dressing heat until it is warm and serve. This is wonderful and only takes about half an hour from start to finish!

My favorite is chicken a la king over mashed potatoes or biscuts.
--melt 1 cup of butter in a saute' pan with chopped onion.
--after onions start to soften, turn down heat and slowly add flour until it thickens up and you have a roux. (1 TBL at a time)
--add 2 cups chicken stock, from a can, as you wisk all the lumps out.
--add 1 can of chicken (same stuff that looks like tuna in a can).
--slowly add 2 cups heavy whipping cream.
--add frozen peas to mix, along with pre-mircowaved baby carrots.
Let entire mix simmer until it starts to thicken up.
Pour a la king over hot biskets or mashed potatoes (Bob Evans micro mash are awesome!!)
If mix needs to be thinned just add water, milk, or more chicken stock. It's an all around cold weather meal. Enjoy!!!!

Tuna Mornay
Cook 2 cups of dry rice. Then, make sauce.
Make a white/cheese sauce melt one tablespoon butter over low heat remove from heat and stir in 2 tablespoons plain flour then put back on heat and slowly stir in 2 cups of milk little by little - gently add 1 cup of cheese simultaneously season with pepper and salt, stir continuously, until it has a thick sauce like consistency.
Stir in one can about 400ml of creamed corn and 3 tablespoons finely chopped parsley, add in 400g tin drained tuna (in springwater) - stir until all combined.
Add rice into the sauce and combine well. Pour mixture into casserole dish and then prepare topping. Combine 1/2 cup of breadcrumbs with 1 tbspn parmesan cheese and 3 tbspns of cheddar shredded cheese. sprinkle over casserole bake in moderate oven until top is crunchy and golden.

Pasta bake.
1 pound maceroni
1 pound hamburg
1 fresh green pepper
1 fresh onion
1 jar favorite sauce (I uae Ragu chunky garden style)
1 bag of taco cheese
chop green pepper and onion, brown hamburg with pepper and onion. Drain grease.
Cook macaroni according to box.
drain and add hamburg mixture, mix with sauce in bowl.
put in cake pan (not sure of the size tho), then top with cheese.
bake in oven at 375 degrees for 15 to 20 minutes or untill all cheese is melted.

potaje de garbanzos -- better known as spanish bean soup. it was supposedly invented by the columbia restaurant in tampa is a great comfort food for cold wet florida winter days -- serve with some crusty bread and a mixed greens salad.

Columbia Restaurant Recipe
Ingredients
½ lb. uncooked garbanzo beans, dried (also called chickpeas)
1 ham bone
1 beef bone
2 quarts water
1 tablespoon salt
¼ lb. salt pork, cut in thin strips
1 onion, finely chopped
1 chorizo (Spanish sausage), sliced in thin rounds
2 potatoes, peeled and cut in quarters
Pinch of saffron
½ teaspoon paprika
Preparation
Wash garbanzo beans. Soak overnight with 1 tablespoon salt in enough water to cover beans. Drain the salted water from the beans. Place beans in 4-quart soup kettle; add 2 quarts of water and ham and beef bones. Cook for 45 minutes over low heat, skimming foam from the top. fry salt pork slowly in a skilled. Add chopped onion and sauté lightly. Add to beans along with potatoes, paprika, and saffron. Add salt to taste. When potatoes are tender, remove from heat and add chorizo. Serve hot in deep soup bowls. Serves 4.

well a hot dish casserole that has hashbrowns, cream of cerlery and cream of mushrooms soup. with hamburger and cheese on top it is really good oh yeah and cream cheese. I think they call it hashbrown casserole.
