I just found a bottle of powdered pancake mix in the cupboard and am wondering what I should put on them. The more way out the better, I want to try something different.

Something different :

Peach Blueberry Pancake Syrup

Ingredients
1 cup sliced fresh peaches
1 cup fresh blueberries
2 tablespoons sugar
1/2 cup unsweetened apple juice
dash of ground nutmeg

Combine 1/2 cup peaches, 1/2 cup blueberries and remaining ingredients in a small saucepan. Bring to a boil; then reduce heat and simmer, uncovered, 15 minutes. Add remaining fruit, stirring well. Serve warm over pancakes or waffles.


Sautéed Apples

This recipe serves: 4

Preparation time : 5 minutes
Cooking time : 10 minutes

Ingredients
1 teaspoon butter
4 firm, tart apples, peeled, cored and sliced
pinch of ground cinnamon (optional)

Cooking Instructions
Melt the butter in a skillet over medium heat. Add the sliced apples and the cinnamon. Saute until the apples are soft. Serve with poultry, pork or pancakes.

Apple Cider Syrup
2 cups apple cider or apple juice
1 cup sugar
1/4 cup butter
2 Tablespoons cornstarch
2 Tablespoons lemon juice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Mix together sugar, cornstarch, cinnamon and nutmeg in saucepan. Pour in juice (apple and lemon). Cook and stir constantly until thickened and boils. Boil and stir one minute. Remove from heat and stir in butter. Serve warm over pancakes.

Chocolate Peanut Butter
1-1/2 cups smooth peanut butter
1/2 cup semisweet chocolate chips - melted
1/4 cup butter - softened
1/4 cup confectioners sugar
1 Tablespoon strong coffee
1 teaspoon vanilla extract
In a large bowl, combine the peanut butter, melted chocolate, butter, sugar and vanilla. Stir until smooth.

Stir coffee into peanut butter mixture.

Store in an airtight container for up to two weeks.


Put this on pancakes or even toast, in the morning. Kids go crazy for it !

Strawberry Butter

cup fresh hulled strawberries
2 cups sweet butter -- softened
1/3 cup powdered sugar
Dash of Pure vanilla
In a blender combine all of the ingredients. Mix together well scrape down the sides if needed.

Store in the refridgerator in a cover container. This may also be frozen for later use.


Something a little different for all those pancakes, waffles and biscuits you are making.

The ultimate topping for pancakes is some butter and top quality maple syrup. But if you want to go way out...hmmm...make a sandwich out of them with a fried egg, some bacon and cheese. Pour some maple syrup on top of the top pancake, let it soak in and dig in! Happy cooking!

Don't worry about the the toppings, If your mix is a complete mix, try making it with cider or apple juice instead of water and use equal measures of mix to cider for thin, moist tender pancakes that are crisp around the edges when cooked with a little canola oil. Use only real butter on top with your choice of syrup. Real maple is best.

Oh sweetie! Stick with the basics! Use only REAL butter and REAL maple syrup, however; when you make your batter use buttermilk instead of regular milk or water then add:

1 teaspoon of vanilla extract
2 tablespoons of brown sugar
1/2 tespoon of nutmeg

Let stand 10 minutes and then add a bit more buttermilk to thin out the batter.

Top with butter and maple syrup.

YUM! YUM! YUMMIFUL!

Big, fresh blueberries and a big spoonful of non-sugared triple cream. Maybe some butter underneath the stack, maybe not.

And fresh, hot coffee!!!
