PECAN PIE
PASTRY
3/4 cup plain flour
1/2 cup self raising flour
2 tablespoons custard powder
2 tablespoons icing sugar
125g butter
1 tablespoon iced water, approximately
FILLING
100g chopped pecan nuts
1/4 cup brown sugar
2 teaspoons plain flour
1/2 cup corn syrup
2 teaspoons melted butter
1 egg
For pastry:
Sift flours, custard powder and icing sugar in bowl.
Rub in butter.
Add enough iced water to bind ingredients
Knead on lightly floured surface until smooth, cover in plastic food wrap, refrigerate for 30 minutes.
Roll pastry between 2 sheets of plastic food wrap and press into pie plate.
For filling:
Toast pecans on oven tray in moderate oven for 5 minutes and cool.
Combine brown sugar, flour, corn syrup, butter and egg in small bowl with electric mixer until smooth.
Put the pecans on top of pastry and pour filling in.
Bake in moderate oven for 15 minutes until golden brown.

Classic Pecan Pie
Ingredients:
1 9-inch unbaked pie shell
3 eggs
1 cup sugar
2/3 cup dark corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/8 teaspoon salt
3 tablespoons Armagnac or other brandy
1 1/2 cups pecan halves
Preparation:
Preheat the oven to 400 degrees F. In a glass mixing bowl beat the eggs. Blend in the sugar, syrup, butter, vanilla, salt and Armagnac. Stir in the pecans. Pour the mixture into the pie shell and bake 10 minutes.
Lower the oven to 350 degrees F. and bake 30 minutes or until a wooden skewer or knife inserted into the pie comes out clean. Cool on a wire rack.

Pecan Pie
"Unlike most pecan pies, this one does not require corn syrup."
INGREDIENTS:
1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.

Chocolate Pecan Pie
1 cup light corn syrup
3 each eggs
1/3 cup butter, melted
1 cup brown sugar
1 dash vanilla
1 pinch salt
2 cups pecans, pieces
1 each pie shell, uncooked
5 ounces milk chocolate, pieces
Preheat your oven to 350 degrees.
Combine the corn syrup, eggs and butter and whisk briskly. Add the brown sugar and mix well. Add vanilla, salt and pecans. Incorporate. Pour the mixture into the pie shell and drop in the chocolate pieces. Wrap a piece of foil around the edge of the pie to help keep the crust from over browning, and place in the oven on a small sheet pan for about one hour until the filling is set and the top is golden brown. Best served at room temperature or warmed slightly in the microwave. And a little Ice Cream on the side won't kill you either. Changed my mind, just leave the Ice cream Container here.
