Mississippi Mud Cake

INGREDIENTS
1 1/4 cups butter, softened
1/2 cup unsweetened cocoa powder
2 cups white sugar
4 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups chopped walnuts
2 teaspoons vanilla extract
1 (7 ounce) jar marshmallow creme
1/2 cup milk
3 cups confectioners' sugar
1/3 cup unsweetened cocoa powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch cake pan.
In a large sauce pan over low heat, melt 1 cup of the butter or margarine and the cocoa. Stir often. Remove from heat and add white sugar, beat well. Beat in eggs one at a time.
Combine flour, baking powder, and salt and stir into the egg mixture. Stir in the chopped nut and teaspoon of the vanilla. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. Remove cake from oven and spread the marshmallow cream over the cake. Spoon chocolate icing over marshmallow topping while the cake is still hot and spread. The cake will get "muddied" by the spreading action.
To Make Icing: Beat together the remaining 1/4 cup butter or margarine, 1/3 cup cocoa, 1 teaspoon vanilla, the milk and the confectioner's sugar. Once well combined spoon over the still hot cake.

1/2 pound (2 sticks) plus 2 teaspoons unsalted butter, cut into 1/2-inch pieces
1 tablespoon unsweetened cocoa powder
2 cups bleached all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup bourbon
1 1/2 cups strong brewed coffee, cooled
5 ounces unsweetened chocolate, chopped
1 3/4 cups sugar
1 teaspoon pure vanilla extract
2 large eggs, lightly beaten






Makes 1 Cake

1. Preheat the oven to 275 °F.

2. Grease a Bundt pan with 2 teaspoons of the butter, then lightly dust with the cocoa.

3. Sift the flour with the baking soda and salt into a bowl, and set aside.

4. Warm the bourbon and coffee in the top of a double boiler or a stainless steel bowl set over a pan of simmering water for 5 minutes. Add the chocolate and remaining butter and cook, stirring, until melted and smooth, about 3 minutes. Remove from the heat. Add the sugar and stir to dissolve. Cool slightly.

5. Using a whisk or an electric mixer, stir the flour, 1/2 cup at a time, into the chocolate. Add the vanilla and eggs, whisking to mix well.

6. Pour the batter into the prepared pan and bake for 1 hour. (The cake will be slightly soft in the middle.)

7. Remove from the oven and let rest in the pan for 20 minutes, then turn out onto a cooling rack to cool for at least 30 minutes before serving.

Mud Cake Ice Cream

Ingredients:
1 scoop of your favorite ice cream
1 piece chocolate cake

Method:
Put scoop of ice cream in desert dish
Allow to soften, but not melt
Stir rapidly
Add the piece of chocolate cake
Stir again to break up the piece of cake, but leave large chunks for the pieces of mud.

this is actually not a cake recipe but its called a dirt cake and its really delicious!!!and so simpe to make

Dirt Cake

1 large pkg oreo cookies
1 (8oz) cream cheese softened at room temp.
1 (8oz) cool whip (choc. flavored if you really want it super choc)
1/2 c margarine (melted)
1 cup powdered sugar
2 pkgs instant vanila pudding
3 cups milk
1 tsp vanilla extract

mix well together the following ingredients, cream cheese, cool whip and margarine. set aside and mix dry ingredients in separate bowl, add milk and vanilla.stir in cream cheese mixture crush oreo cookies and layer a square casserole dish and put a layer of crushed cookies on bottom,then spread cream cheese mixture on top and top with another layer of crushed cookies!!!!!!!!chill in fridge for at least a couple of hours.......and watch it disappear ENJOY
