There's a place in Chinatown where you can get fresh chicken (which makes for tasty chicken soup). It's very sad but they kill the chicken the same day you order it.
There's a huge fake cartoon-like chicken on top of the building so the place will be hard to miss.
I hope that's what you mean by 'stewing' chicken. The best chicken for stew.

Go to Ralph's or Albertson's next to and with the other chicken look for a ROASTING chicken, you'll see they are a lot larger then the "fryer's". Those are what you can stew with, also ask the Butcher if you don't see them, sometimes they only put out a couple at a time. Happy Stewing

Yes, as already mentioned, try going to an Asian market. I am not familiar with the markets in Los Angeles...why not take a short drive into Monterey Park. There are many Asian markets there such as 99 Ranch, Hawaii Supermarket, Shun Fat, and there is a new one that just opened on Valley Blvd. in Alhambra (formerly Vons so it is quite large). Of course, you can always go into Chinatown in L.A. but parking is horrible.

You can use any chicken to stew, including a frying chicken.
I don't know of any good butchers in LA, where you can get stewing chickens or chicken necks and backs (to make stock) or gizzards and livers to make gravy.
It so boring.

Try going to Asian markets, they would have it.
"Regular" markets wouldn't even carry a product
like that, that's why these people haven't even heard of it.
