Actually, Cantonese, Hokkien, and other "dialects" of Chinese are not actually dialects of Chinese, because they are not mutually intelligible. So learning one of these would actually be learning a new language.

I don't really believe that any language is easier than any other, but it occurs to me that, if you are literate in Chinese, you could more easily learn the Japanese writing system.
