Unfortunately, potato chips and fries do not count as a serving of vegetables. It is more of a serving of starch.

As a general rule, theres far too much cooked out of the potato during processing for it to have much nutritinal value. Potatoes themselves are high in starch and potassium however the amount of residual oil left is probably more unhealthy than the little bit of starch and vitamin K you wuld get.

I still eat them too.

No. In no way do they count as a serving of vegetables.

By the time to heat them to that level and put in so much grease, they are no longer a vegetable.

A potato on it's own--yes.
A potato in a form of chips and fries--no

Nice try, but they're actually tubers. They're considered a serving of starch. I know, they are so good! I think I have fries with every meal. Either swimming in gravy or with just a spritz of vinegar! MMmmmmm, now I wanna go plug the deep fryer in. Thanks!

Potatoes count as carbs not vegetables.
They also contain lots of potassium.
They are quite healthy as carbs but maybe not with the oil you cook them in!

Potatoes are vegetables until you deep fry the H, E , double hockey sticks outta them then you have shoved all the nutrients outta them and all you have left are fatty carbs.
