Green Vegetable Soup

Original recipe yield: 6 servings

INGREDIENTS
2 onions, chopped
3 cloves garlic, minced
3 tablespoons butter or margarine
2 (14.5 ounce) cans chicken broth
4 1/2 cups water
3 large carrots, peeled and chopped
1 leek, bulb only, chopped
3 green onions, chopped
1 1/2 habanero peppers, seeded and chopped
1 (10 ounce) bag fresh spinach
1 bunch watercress, trimmed and chopped
1 tablespoon salt and pepper to taste
1/4 cup extra virgin olive oil
1/8 cup red wine or balsamic vinegar

DIRECTIONS
Cook onion and garlic in butter over medium high heat until onion is translucent, about 5 minutes. Add chicken stock, water, carrots, leeks, green onions, habanero peppers, spinach, and watercress. Bring to a low boil, and cook for 30 minutes, or until carrots are soft. Remove from heat, and allow to cool for 30 minutes.
Puree in a blender or food processor until smooth. Return to the pot, and simmer on low heat for 15 minutes before serving. Serve with a drizzle of olive oil or vinegar, or both, if desired.

Chinese Vegetable Soup

Amount Measure Ingredient -- Preparation Method
10 cups water
1 1/2 cups mushroom liquid
1/4 cup Tamari soy sauce, low sodium
1/4 cup sherry -- optional
3 garlic cloves -- crushed
1 tablespoon fresh ginger root -- grated
2 packages shiitake mushrooms -- dried
1 onion -- cut in wedges
1 bunch green onions -- cut in 1" pieces
3 stalks celery -- sliced
1/2 pound chinese cabbage -- sliced
1/2 pound soba noodles -- ** see note

Pour 2 cups hot water over the mushrooms in a bowl; soak for 15 minutes.
Meanwhile, put 10 cups water in a large soup pot. Add tamari, sherry, ginger,
and garlic. Bring to a boil. Add onion wedges. Reduce heat. Squeeze excess
water from the mushrooms, reserving the liquid. Add 1 1/2 cups of this liquid
to the hot broth. Chop mushrooms discarding tough stems, and add to broth. Add
remaining ingredients, except for the noodles. Simmer over low heat 15 minutes,
add noodles, and cook an additional 10 minutes. Serve hot.

HELPFUL HINTS: This will make a meal for four people, or a first course, with
other Chinese food, for eight people.

NOTES : ** Use buckwheat soba noodles in recipe, and add to Mastercook's
ingredient database.

INGREDIENTS
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium sized onion
2 each carrot
1 handfull green beans
8 each button mushrooms
4 cups chicken stock
3 cups water
6 each potato
salt and pepper
1/4 cup parsley
PREP WORK Not too much prep for this soup. Just chop up the onion, slice the carrots into 1/4 inch thick pieces, trim and halve the green beens. Slice the mushrooms into 1/4 inch pieces, chop the potatoes into 1/8's or 1/4's depending on their size and chop the parsley. Now you are ready to put it all together.
HOW TO MAKE AT HOMEHeat butter and oil on medium high in a soup pot. Sauté onion, carrot, green beans for 3-4 minutes.
Add mushrooms and cook for another 2 minutes. Add chicken stock and water, potatoes, and season with salt & pepper.
Bring to a boil, cover, reduce heat and cook at a gentle boil until the potatoes are tender. (approx. 15 minutes) Add parsley just before the potatoes are cooked.
Season to taste and serve.

Winter Vegetable Beef Soup
From Diana Rattray,

INGREDIENTS:
1 pound very lean ground beef
1 large can stewed tomatoes
1 large can tomato sauce
1 package dry onion soup mix
1 can beef broth & 1 can water
1 package frozen, mixed vegetables

PREPARATION:
In a large skillet, brown ground beef. Mix all above ingredients together in 4-quart crockpot; cover and cook on LOW for 7 to 9 hours, until vegetables are tender.
