Yes, you can make cookies without eggs. There is a whole book on the subject called "Bakin' Without Eggs," linked below.
Vegans do not eat eggs but they make some great cookies! So you could also pick up any vegan cookbook or do an online search for vegan cookies. One of my favorite vegan recipe sites is http://www.theppk.com.
In many cookie recipes the egg is there to add richness to the cookie; it doesn't serve as a binder. In a recipe calling for only 1 or 2 eggs, you can often simply omit the eggs. Or substitute a bit of milk or soy milk to replace the liquid (use about 3 tablespoons liquid per omitted egg).
Many cookie recipes also naturally do not use eggs. Shortbread is a classic example; it's just butter, flour, sugar and a touch of salt.

Check the page below out. It depends on what you are cooking as to what you can use for an egg substitute. Tofu for example can be used in some recipes vinegar & water in others & bananas in other foods. so read what they have to say here. The only other thing is to get the egg substitute in the store

Don't try to alter any recipes or they won't turn out right. Look for a recipe without eggs. They exist.

You can use egg whites or egg beaters, or purchase powdered imitation eggs in the grocery store.
I would check it out on line.
