A Catholic Deacon is Ordained and is clergy. His formal title is Deacon and in a letter or formal document should be Reverend Mr.
Some Deacons were never married but those who are once the spouse dies must remain celibate unless there are young children involved and then it is on a case by case basis with direct approval of the Bishop if remarriage will be permitted. So the answer should be The Reverend Mr. & Mrs. Doe

Oh my. The first two answers are utterly wrong. Deacons do NOT ever get called Father. And yes, Deacons DO have wives. That's why they're deacons and not priests!!!
The third answer COULD be correct. But I do not know a single deacon who is called deacon or wishes to be called deacon. They're usually just Mr. So the proper way to address it would be Mr. and Mrs. ...

To adrdress a letter to a Deacon and his wife, if he is married it should look like this
Deacon and Mrs. Anthony Stewart
1234 anywhere street
Warm place, Florida, 12345
If this is a formal letter you would start the letter with Dear (or what ever you use) Deacon Stewart. If you know the Deacon he may go buy Tony. So you might all him Deacon Tony. This is no different than the tilte of Doctor.
