They are raw, have been shelled and soaked in vinegar.

The Volunteer firemen in our town had an oyster feed and sent the rest home with my husband. We have frozen them, thanks to you all.

The firemen soaked them in vinegar, for whatever reason...I was wondering about that myself!

It depends on how you want to eat them. Shucked fresh icy ones to eat raw from the shell.....minutes on ice (well, maybe a little longer but if I was around, NOT!). The vinegar thing throws me so I'm assuming you're gonna cook them in a recipe? The freezing recommendations above are good, too. Once they're cooked, they should keep like any fish product if kept well refridgerated & stored properly.

Oyster do not keep very long at all. If you are not going to cook or eat them by tomorrow, then you can freeze them in water. They will keep a good while in the freezer.
I don't think I have ever heard of soaking oysters in vinegar. What I usually do is store or freeze them in their own juices, that way they don't lose their flavor.

Hi, oysters that are in the shell unopened can keep for up to a month. Oysters that are opened and have not been shucked can keep on ice for about a week.

Cheers!
