Make raw short pastry cases in patty tins. Put a spoonful of jam in each case, and cover with the following mixture: 4 oz ground almonds, capful of almond essence, 2 oz margarine, 2 tablespoons of castor sugar, 1 egg. Mix all together, spread over jam, making sure mixture reaches the edge of the pastry cases. Decorate with strips of pastry if desired. Bake 10-15 mins at 370*F or 190*C or until lightly browned.

Congress Tarts

List of Ingredients
4 oz Plain White Flour
1/8 tsp Salt
1 oz Solid Vegetable Oil
1 oz Butter
3 tbs Water
1 : For The Filling:
2 oz Butter
2 oz Caster Sugar
1 x Egg, beaten
1 oz Ground Almonds
1 oz White Self-Raising Flour
1/8 tsp Almond Essence
1/8 tsp Vanilla Essence
2 tbs Seedless Raspberry Jam


Instructions for Preparation
Oven setting 350F; Gas Mark 4. Sieve the flour and salt together. Add the fat cut into small pieces. Rub in with the fingertips until mixture resembles fine breadcrumbs. Add a little water and mix with a palette knife until mixture holds together but is not sticky. Knead well. Roll out thinly on a lightly floured board and cut into 3 inch circles with a pastry cutter. Line two x 12 hole bun trays with the pastry. Cream the butter and sugar together, add the egg and beat well. Add the remaining ingredients for the filling and mix to a soft consistency. Put a little jam in each tart and a teaspoonful of filling. Bake in a moderate oven for 30 minutes. Cool on a wire tray. Adding a pastry decoration: roll out pastry trimmings, cut in narrow strips ¼ inch wide and 2 inches long. Lay two strips Criss cross on top of each tart before baking.
