I like to cook Pumpkin Pie. I have always wondered why the crust seperates from the pumpkin. Can someone tell me why and what I can do differently to heep it from happening again?

I have a couple tips for pumpkin pie; not really sure why the separating thing happens; before you put the pie filling in the pie crust, brush the inside with egg whites-it will help prevent a soggy crust. Also instead of evaporated milk use half and half or the liquid whipping creme and add 2 tablespoons of flour to the filling.(most recipes call for the can of milk, use 1 cup of half and half or whipping creme) This makes an amazing filling. I also don't do the high then low temp..use a glass pie plate(best for browning) and put the pie on the lower rack at 350..hopefully this helps.

Baking it for too long. when the mixture heats up, it contracts and if there isn't enough liquid or the heat is too high or you leave it in the oven too long, that will happen. Is your oven gas? Gas ovens are really hard to regulate, but stuff turns out better than in an electric.... ahhhhh.... anyways, my suggestion is to just really watch the pies and if you see some seperation, turn down the oven a little.

Cook at a slightly lower heat for little less time. Maybe you have overcooked your pies. Pumpkin pie is supposed to still be a little moist in the center when you remove it from the oven. It continues to solidify as it cools.

Custard Pies, such as Pumpkin Pies, have the tendency to crack if they are overbaked.

You can also add a 1 - 3 tablespoons of cornstarch to any custard pie recipe. Blend it in with the sugar before adding.

Bake it on a bit lower heat,keep it loosely covered for the first 20 minutes of baking then uncover and bake till ready.

You're either not using enough filling or overcooking it.
