OATMEAL CANDY

2 c. sugar
1 stick margarine
1/2 c. milk
2 tbsp. cocoa
2 1/2 c. oatmeal

Mix sugar and cocoa together.
Add milk.
Bring to a boil and boil for 1-1/2 minutes.
Remove from heat and add oatmeal.
Drop on wax paper with a teaspoon and allow to cool.

This is really good candy....and my friends and family love it.

Apple Betty

4-5 Apples
3/4 Cup Flour
3/4 Cup Brown Sugar
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1/4 Teaspoon Salt
1/3 Cup Melted Butter


Peel and cut up apples. Put pieces in pie pan. Put salt, flour, sugar,
cinnamon, nutmeg in bowl. Melt butter in saucepan and pour in Bowl. Mix
with fork. Spoon mixture over apples in pan, covering completely. Bake at
375 Degrees for 35 minutes or until apples are soft. Serve in small Dessert
cups with whipped cream on top.

GUACAMOLE

1 ripe tomato, peeled
2 avocados
1/2 onion, minced
1 teaspoon LEMON JUICE (to keep from turning brown)
salt and pepper to taste

Mash together the tomato and avocados.
Stir in remaining ingredients.
Serve with warm tortillas.



CHUCK ROAST

1 (2 to 2 1/2 lbs.) boneless chuck roast
1 med. onion, chopped
Salt and pepper to taste
3 tbsp. four in 1 c. water

Using pressure cooker, pour about 3 tablespoons cooking oil, heat on high heat, and sear the chuck roast. Remove meat, install bottom rack, and replace meat. Add chopped onions on top, and add 3/4 cup water. Install pressure cover and on high heat, release the steam from the cooker. Install pressure weight and, on high heat, bring to 15 lbs. cooking pressure. Lower heat to medium (to hold 15 lbs. pressure on pressure weight), and cook 35 minutes. Remove and cool under cold water until pressure weight returns to normal. Remove cover, remove meat and rack, and add 1 cup water with 3 tablespoons flour for thickened gravy. Enjoy!


BAKED LASAGNA

1 lb. ground beef
1 clove garlic, chopped
1 tbsp. parsley flakes
1 tbsp. basil
1/2 tsp. salt
1 (1 lb.) can tomatoes (2 c.)
2 (6 oz.) cans tomato paste
3 c. cottage cheese
2 eggs, beaten
2 tsp. salt
1/2 tsp. pepper
2 tbsp. parsley flakes
1/2 c. grated Parmesan cheese
1 lb. mozzarella cheese
4 lasagna noodles

Heat oven to 350 degrees. Brown meat, drain off excess fat. Add next 6 ingredients and simmer uncovered for 6 minutes. Cook noodles, as directed on package.
Combine eggs, cottage cheese, salt, pepper, parsley and grated Parmesan cheese. Place small amount of sauce just to wet bottom of dish, then place noodles, sauce, cottage cheese, etc. in layers. Place mozzarella cheese on top. Bake 30 minutes or until cheese melts. Then let cool for 15-30 minutes so you can get it out of the dish without it running all over the plate. Serves 12.


FRIED GREEN TOMATOES

Cut good-sized green firm tomatoes in 3/4 inch slices. Do not peel. Dip in all purpose flour or bread crumbs, seasoned with salt and pepper. Fry in hot shortening (bacon drippings add flavor). Turn once with pancake turner.



BELGIAN WAFFLES

2 c. heavy cream
2 tbsp. superfine sugar
1/2 teaspoon vanilla extract


Waffle Batter:

1 1/4 c. sifted cake flour
2 tsp. baking powder
1/4 c. sugar
pinch of salt
4 egg yolks
1 1/2 c. milk
1 tsp. vanilla extract
1/2 c. melted butter
4 egg whites

Preheat a waffle iron.
Whip the first three ingredients and place in refrigerator to chill.

Sift together the flour, baking powder, 1/4 c. sugar, and salt onto a piece of waxed paper.

Beat the egg yolks lightly and add the milk, vanilla and melted butter. Drop in the dry ingredients and stir just enough to combine.

In a separate, clean bowl, beat the egg whites until they are stiff but not dry and fold them into the batter gently.

Bake in a seasoned waffle iron at medium heat until the steam stops escaping.

Dust the baked waffles with confectioner's sugar and top with whipped cream. Sliced strawberries or peaches may be served on top



ORANGE JULIUS

4 oranges
2 ounces vanilla coffee creamer, fresh
10 ice cubes

Peel oranges and place in blender. Add coffee creamer. Blend on High for 10 seconds. Add ice and blend untill creamy smooth. Tastes like the real thing! Enjoy

Herbed Cheese Ring -
1 pkg active dry yeast
1/4 c warm water
1 c warm milk
1/4 c veg oil
2 TBS honey
1 egg
1 tsp salt
1 c wheat flour
1 c flour
1 tsp each oregano, basil, rosemary

Dissolve yeast in warm water. Add rest of ingredients and beat until
blended. Stir in enough flour to form a soft dough. Cover and
refrigerate overnight. Punch down dough. Turn onto a well-floured
surface, divide in half. Roll one portion into a 15x10 inch rectangle.
Combine filling:
1 1/2 c shredded cheddar
1/2 tsp parsley
1/4 tsp garlic powder
1/4 tsp paprika

Sprinkle half over dough. Roll up jelly roll style starting with long
side and pinch to seal. Place seam side down on a greased baking sheet. Pinch ends together to form a ring. With a sharp knife, cut 1/2 inch slashes on top in 2 inch intervals. Repeat with remaining dough and filling. Cover and let rise in a warm place until doubled in size or about 30 min. Brush each ring with egg, sprinkle with sesame seeds and parmesan. Bake at 350 for 20-25 min. or golden brown. Cool on wire racks.

Apple Cake-
1 c. butter
1 1/2 c. sugar
2 eggs lightly beaten
2 c. flour
2 tsp baking soda
2 tsp cinnamon
2 tsp vanilla
4 tsp lemon juice
1/2 tsp salt
4 c. peeled, chopped apples

Cream first three ingredients, beat 1 minute. Combine dry ingredients and add to creamed mixture, beat well. Fold in apples.
Heat oven to 350. Bake in greased 9 x 13 pan until toothpick inserted in center comes out clean.
Makes 2 loaves

Orange Glazed Blueberry Scones-
2 c flour
1/3 c sugar
1 tsp salt
1 tsp baking powder
1/4 c cold butter
1 egg
3/4 c buttermilk
1/2-1 c blueberries

Sift flour, sugar, salt, and baking powder. Place in mixer. Add butter. In another bowl, wisk egg and buttermilk. Pour into flour while mixing. Do not overmix! Mix berries with a little bit of flour and mix into batter. Stir carefully. Drop scoops onto pan, Bake at 400 for 15 min. After cooling, drizzle with orange glaze.
GLAZE-
2 c powdered sugar
2 TBS butter
juice from 2 oranges

Mix and heat. Let cool before drizzling over Blueberry scones.
