What is the reasoning behind cooking with beer? Is it a tenderizer? Will my pot roast taste like beer? I am using a recipe that says to marinate it overnight in the beer, Is that correct?

Roast beef marinated in beer is good - it does act as a tenderizer. It will alter the beef taste somewhat but it won't taste like you are drinking a beer (yuck! - I've never acquired that taste). The rest of the seasonings you use will actually dominate the flavor. If the recipe calls for marinating it overnight, that's what I would do.
Another great pot roast marinade to try is coca cola. You pour a 10 oz. can in with the roast and cook as usual. My mother started using that after going to a food party about 15 -20 yrs. ago. It's the best roast I've ever had. The Coke tenderizes the meat so much that it practically melts in your mouth.
I think I'm going to call my mom now - it's about time for another pot roast family dinner, lol.

Yes it gives it a slight beer taste and adds flavor to the meet. I don't like beer either but cooking/marinating meat in beer is actually very tasty. Helps to keep it moist as well.

Beer helps break down meats so they become more tender. I use it in chili, chicken dishes, etc. It also brings some flavor to the party. I dont think your roast will taste like beer but I bet its yummy!

I've always used alcohol, including beer and whiskey, in cooking because it intensifies the flavor of whatever it is you are cooking. When cooking with beer, the taste of the beer usually goes away, but whiskey kinda sticks with it, although the alcohol cooks out.

it will have a beer taste but it is actually VERY good. The alchohol will burn off in the cooking process. If you want a NA try O'Doules(sp?) That one tastes the best.

Beer is a great tenderizer, think about how loose you feel after just 2.
Honestly, the barley and hopps in beer is what makes it so good on meat. If you dont want the alcohol, buy non-alcoholic.

Yeah, it gives the food an interesting flavor and kind of a tang. Like in beer battered fish.

it relatively is okay in limits. do no longer pig out on it (this is going to be no longer hassle-free because of the fact it sounds so sturdy). Mercury in shrimp is relatively low. Shrimp is between the few seafood products this is okay for pregnant women people to eat. once you cook beer, the alcohol chefs off and what's left is the flavour. determine the shrimp is definitely finished. delight in!
