In poker slang a shark is a skilled and experienced player who knows how to win money at the game. They are very dangerous players who know exactly how to take all your money. They are predators, hence the reference to sharks.
Fish is slang for bad poker players. Those who don't understand the game. Those who make bad plays based on inexperience, ineptitude, and stupidity. A good player will spot these losers quickly (usually within 20 minutes) and will then proceed to use their skill to take their money.

A fish is a weak poker player that is out of their element out of the poker table but doesn't know it. They play more hands than they should and stay involved in the hand longer than they should.
A shark is a skilled poker player that plays for profit more than for fun. A shark eats fish all day long and never gets full.

A fish is a new player or someone who just sucks at the game and keeps on giving you money because they think its about luck and one time theyll get "lucky".

a shark is someone who is really good. usually a pro. someone who can pick on all the weak players.
a fish is a really really bad players. someone who consistently loses. someone who gets their money taken from everyone at the table, not just the best players.
also, a fish keeps coming back for more. he continues to play no matter how much he loses.....
