i don't think so for celiac disease because the bodies inability to absorb nutrients would show up more so on a test that actually involves a patient eating the night before as opposed to not having a meal for 10 hours. i work for a gastrenterologist and they encourage a big meal before a celiac test. Gluten intolerence is just a test to show if you are allergic to wheat products......so yes they would show up but fasting really is pointless......cause the results would show up regardless..
