It tenderizes the meat, makes it taste salty and also halfway pickles the meat. I know alot of people who swear by a brine soak for a turkey but that is not me. It is the new "in" way of doing turkeys.

Brine is salt water at 50% or more. Raising brine shrimp is the first microscope projects kids do. It would preserve the meat by drying it out. If you play your spices right you could end up with beef jerky.

An answer that is quick and to the point, because I'm a cook and have been cooking for 20+ years and I love it. I've worked in retirement homes, restaurants, hotels, casinos, for neighbors, for family. My favorite was when I was working in the retirement home because I like the elderly folk, and the casinos were a pain in the butt. Anyway, about your question, to brine meat is to tenderize and flavor.

Tenderizes it. It doesn't pickle it unless you add ingredients to pickle it. I soak all of my deer I kill in brine for several days to tenderize it and get rid of any blood or game taste.

Pickles it, people do that with venison and beef and look at pickled pigs feet.. kinda gross but its an old method to preserve meat
