I tried this once before and realized I needed to fine tune my question (didn't really get the kinds of answers I needed). Please read through to the end of these details!

I am looking for help finding recipes for casseroles that can be made ahead of time, then frozen and reheated in the oven.

We have a freezer, so ideas on how to prepare them for the freezer, and then how long to reheat them in the oven would be ideal. We don't use a microwave (don't have one, by choice).

We don't eat pork. We also don't eat a lot of processed foods, so recipes that call for canned soup, canned veggies, frozen "tater tots" will need substitutions.

High-fat recipes are AOK (if anything our family needs to eat MORE fat)!

Right now we have a lot of dairy (cheese, cottage cheese, sour cream, milk) that I can't stomach at the moment (we just found out I'm pregnant) but don't want to go to waste, so recipes that include dairy ingredients would be a bonus!

ikkie, i know my question was very specific...sorry you thought it was TOO specific, but in my experience, the more detailed the question, the better the answers. thanks for your opinion... i'm sure you know you're entitled to it.

ragzitini: I'm not sure as I've never heard of the Weston A. Price traditional diet. I've developed my own eating plan based on books, experience, other research. I'll probably substitute organic chicken or fish for the pork in your recipe, looks good! Thanks!

The first thing that came to mind was leek and potato 'hotpot.' Searching for something-or-other hotpot will tend to get better results, for your purposes, than something-or-other casserole; less "1 can Campbell's, 1 bag Tater tots, etc."

It freezes well. I wouldn't worry too much about that; make it up to the "and then shove in oven" point, freeze, and defrost overnight in lieu of microwaving.

Italian One Step Casserole

"This is a great meal that's so economical and easy. Just cut the ingredients into a pan and bake! Serve with Italian bread. Buono Appetito!"
Original recipe yield: 6 to 8 servings

PREP TIME 20 Min
COOK TIME 1 Hr 20 Min
READY IN 1 Hr 40 Min
US METRIC

INGREDIENTS
1 pound sausages
4 potatoes, peeled and cubed
2 carrots, chopped
1 onion, chopped
3 (15 ounce) cans crushed tomatoes with juice
1 1/2 teaspoons salt
1 pinch ground black pepper
1 pinch dried oregano
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Remove casings from sausages and cut into 1-inch pieces. Place these into a 10x15-inch roasting pan. Layer the potatoes, carrots and onions over the sausages. Then pour the tomatoes over all. Season with salt, ground black pepper and oregano.
Cover and bake at 375 degrees F (190 degrees C) for 60 minutes, then uncover and bake for 15 to 20 more minutes.

A great recipe from my mother in law
They call it Spinny- hot- pot
Make a sauce with 12 tbs butter, 1 cup flour, 4c. milk and then add as much grated cheese (cheddar is great) as you like, I go with about 4 cups. Add two pkgs of thawed, cooked chopped spinach (or better, equivalent of fresh spinich) to the sauce.
Boil whole potatoes. I use about 4lbs for two 9x13 pans.
Slice potatoes thinly.
Lay one layer of potatoes, cover with chopped meat (I use ham but you don't eat pork...my mother in law used Hot dogs, but ham is much better) and then the cheese spinach sauce. repeat until pan is full. this should make 2 13x9 pans but the recipe I was given did not include measurements so you may have to modify some.

How about "Homemade macaroni and cheese" (don't worry, no milk) Ingredients: Brick cheddar cheese-sliced thin
1 can stewed tomatoes
macaroni noodles-boiled till soft-but not quite cooked.-can of tomato juice
directions: cook macaroni noodles as directed above.
add stewed tomatoes to drained noodles.
lightly grease casserole dish(freezer safe dish)
layer portion of noodles with a layer of cheese. Repeat layers till all is used. Pour tomato juice over noodles and cheese till it appears to be completely through mixture. Bake at 350F. for 1-12 hrs. Let cool for a while and freeze. Reheat your oven,and bake till warm.Enjoy!

tuna casserole (from scratch- no soups..)

INGREDIENTS
1/2 cup butter, divided
1 (8 ounce) package uncooked medium egg noodles
1/2 medium onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, minced
8 ounces button mushrooms, sliced
1/4 cup all-purpose flour
2 cups milk
1 teaspoon salt and pepper to taste
2 (6 ounce) cans tuna, drained and flaked
1 cup frozen peas, thawed
3 tablespoons bread crumbs
2 tablespoons butter, melted
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter.
Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain.
Melt 1 tablespoon butter in a skillet over medium-low heat. Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.
Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole. Top with cheese.
Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

here is a link that has tons of recipes on it. As far as freezing I would just make them up ahead of time, and freeze them before you bake them, then when you are ready for them just bake like called for in the recipe... That would be the easiest way..
