Yes you can freeze the cheesecake with no problem. I usually cut the cake into portion sizes then insert small sheets of waxed paper between the slices and reassemble into the cake round then wrap well. This way you can take out only what you want to enjoy each time without having to thaw the whole thing. The was paper between the slices keeps them from sticking to each other.
