I like the recipe on the back of the bisquick box, lol.
I also have used crescent rolls (flattened out) and sometimes canned biscuits across the top of the chicken and veggie mixture.
When I use the frozen pie crusts I bake the bottom crust for a few minutes in the pan before I add the ingredients and the top crust - otherwise the bottom will end up kind of doughy.
The mixture I like to use for the pie itself:
1 can cream of chicken. I often mix a little dry chicken gravy mix with this to thicken it up and add more flavor.
1 bag of frozen veggies - the freshlike vegetable soup mix is a good one, but whatever veggies you like will do. Thaw or even boil them, drain before adding to mixture.
1 large potato - diced and boiled for about 10 or 15 minutes before adding it to the rest of the ingredients.
I cheat with the chicken these days - I buy the already cooked rotisserie chicken from Walmart or Sams. They are only about $4.00 and are easy to separate and throw into the mix. They are often seasoned beautifully and add great flavor to the chicken pot pie. There is usually more than enough chicken left over from this to make a chicken broccoli casserole, chicken salad, or chicken and rice.
Oh yes, make sure you add a little sea salt and a bit of pepper to the mix before it goes into the oven.
Bake on 375 for about 30 - 40 min. (everyone's oven varies a bit). I suggest you use foil or pie crust protectors around the edges so they don't burn.

1. Heat oven to 400 degrees. Stir vegetables, chicken, and soup in ungreased 9 inch pie plate.
2. Stir remaining ingredients until blended. Pour into pie plate.
3. Bake about 30 minutes or until golden brown.

INGREDIENTS
2 (9 inch) deep dish frozen pie crusts, thawed
1 (15 ounce) can mixed vegetables, drained
2 cups cooked, diced chicken breast
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a bowl combine the mixed vegetables, chicken, cream of chicken soup and milk. Pour mixture into one of the pie crusts. Turn the other crust over and pop out of the tin onto the top of the filled pie. Seal the edges and poke holes in top crust.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until crust is golden brown.

1/4 cup chopped onion
4 eggs
1 1/3 cups milk
3/4 cup Bisquick
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 400 degrees F. Grease a 10-inch pie plate.
Mix chicken, peas and carrots, mushrooms and onion in plate.
Beat remaining ingredients until smooth, 15 seconds in blender on high speed or for 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 30 to 35 minutes. Cool 5 minutes.
Yield: 6 to 8 servings.

Buy 2 frozen pie crusts. Mix together1 bag of frozen mixed vegetables ( cook them first). 2 cans of Swanson chicken breast and 1 jar of chicken gravy. Put the bottom crust in the cooking dish, mix together the rest of the stuff and put the top crust on. Bake at 350degrees for about 30 minutes or until the crust is brown.

INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery. Add water to
cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick.
Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough.

Use the tube crescent dough..just press the perforations together and roll out to the thickness you want..cut out your circles and go!
