tuna casserole:
cook off some elbow pasta. perpare your tuna as usual, with mayo, salt, pepper, etc.. combine with your pasta, add some frozen peas (that you've defrosted and add it to the hot pasta at the end, it will come to temp, and stay beautifully green) combine and you have tuna casserole.. sweet and simple.

This is how I make tuna casserole.
Cook/drain 8 oz egg noodles. Put back in saucepan.
Stir in:
2 cans tuna (6 1/2 oz size), drained
1 1/2 cups sour cream
3/4 cup milk
1 (3 oz) can sliced mushrooms, drained
1 1/2 tsp salt
1/4 tsp pepper
Pour into an ungreased 2 qt casserole.
Mix:
1/4 cup Italian bread crumbs
1/4 cup grated Parmesan cheese
2 tbs melted butter
Sprinkle over tuna mixture. Bake in 350 degree oven for 40 minutes.
Altho this is so simple, it is good enough for company. I serve it with tiny peas on the side, sliced tomatoes (or wedges), rolls. Great comfort food.

This may sound strange, but every review I've read of the recipe raves about it. I haven't tried it yet since my wife is averse to tuna.
Bill's Beefuna Burgers
"These burgers are easy, different, and deee-licious. Ground round is mixed with tuna, onion and sweet relish to form a burger that is sure to delight your senses. These can also be fried in a non-stick skillet without any oil."
INGREDIENTS:
1 1/2 pounds ground round
1 (6 ounce) can tuna packed in
oil, drained
1 large sweet onion, finely
chopped
3 tablespoons sweet pickle
relish
seasoning salt and pepper to
taste
6 hamburger buns, split
DIRECTIONS:
1. Preheat an outdoor grill for medium-high heat. When grill is hot, lightly oil the grate.
2. In a large bowl, mix together the ground beef, tuna, onion, and relish. Season with seasoning salt and pepper to your liking. Form the meat mixture into 6 patties.
3. Place patties on the hot grill, and cook for 6 to 9 minutes on each side, or until cooked through. Serve on buns with the usual toppings.

On a plate put a bed of lettuce or whatever kind of green you want. Top it with tuna and sourcream or cottage cheese. Very good and nutritious.

I like to make kraft mac and cheese and just stir in a can of tuna it's great.
