It depends of your height, weight and body frame. You need to find out your Basal Metabolic Rate (BMR) which is the amount of calories you'll burn by just laying in bed all day.

To maintain an exact weight that is the amount of calories you need to consume.

It depends upon how active you are in that day. Your calorie burning goes up (or down) depending upon how much exercise you get that day... most people need only about 1800-2000 a day to remain stable.
If you sit all day you will need less calories, if you run around a lot you will need more.
You can buy books that tell you the caloric count of every kind of food... The Calorie Counter is the one that I have... .
Or this website:

THat depends on youre current height, weight, how often you exercise, how vigorously, how long, and your weight goals. Go to www.thedailyplate.com and type in any food you want to know about. It'll give you the cal information. Also, if you register there, it'll tell you how many cal you should eat per day.
