A caffe latte in a Sardinian cafe, made with Illy coffee in a tall glass. One packet of sugar, stirred well and not scalding hot. With that I would like a Krispy Kreme plain glazed ring donut - not that such a thing exists in Sardinia!! Just goes to show you can't have your cake and eat it sometimes xxx

1. You need water that is soft and at no more than 80 degrees C
2. You need a good coffee such as Colombian (this you can make strong without it being bitter - it is ripened under the banana plantations not out in the sun which causes the bitter oils to develop). Make sure that it has not passed through Dutch hands before you get it. They like their coffee bitter so they tend to burn Colombian coffee to give it a bitterness and you can smell and taste the burnt beans.
3. Brew your coffee by whatever method you choose as long as you don't use water that is too hot (see 1 above)
4. It is drunk best on its own (no cake or biscuit) but if you insist then go for Obleas - these are thin wafers sandwiched with crema de leche made from the skimmings of boiled milk.

I'd just like to say that any resemblance between instant coffee, and fresh-ground coffee is purely coincidental.
Don't misunderstand me, I like Nescafe and Maxwell House, and a few others, but it can't hold a candle to 'real' coffee. It's something you drink because you like it, and I do like it, but 'real' coffee is something else.
Arabica beans, freshly ground in a cafetiere, very hot (not boiling water which scorches the beans), pour into a warm china coffee cup, sugar and double cream to taste, couple of bitter chocolate biscuits, either plain or with mint flavouring.
A good looking and somewhat slutty brunette, wearing just a little too much makeup sitting opposite me, enjoying the coffee with me, her low-cut top revealing ample cleavage and glimpses of her red satin bra which is a little too small for her heaving breasts.......
Fu*ck this.... I'm off for a cup of coffee.....

Half a cup of milk (fresh, whole), half a cup of water in the micrwave for 1 minute, 30 seconds. A spoon and a half of Nescafe Gold Blend and stir untill it's all dispersed, then two spoonfulls of sugar stirred really well, so it doesn't settle at the bottom of the cup. Not with it, but afterwards, a double choc-chip muffin! = )
