It's like so many Welsh names imposed on the Welsh by the English, who took exception to their habit of not having surnames, but referring to everyone as the son or daughter of their dad. (They still do this in Iceland, but nobody minds). The English bestowed epithets which were run of the mill English Christian names with s on the end, e.g. Roberts, Williams, Davies, or else told people with names which elided easily that they could join the "ap" ("son of") with their father's name to make it one name rather than two, e.g. ap Richard became Pritchard, ap Henry became Penry, ap Rhys became Preece or Price, etc. etc.
Now imagine someone whose father rejoiced in the name of Ioan ("John") coming forward to be registered by the English. They simply wouldn't be able to pronounce it! So they would anglicise it and tell Guto ap Ioan that he could be referred to as Guto Jones in future. Too bad that there was no "J" in Welsh, as there was in English. So that was that!

Interesting answer from Caicos - I had often wondered about this. Still, why is the Welsh name Jones rather than Johns?

I'm going to guess that you are wondering about Tom Jones, the Welsh Las Vegas singer. Jones is his middle name. His last name is Woodward.
