I run 2 miles a day 7/7 days a week, but not always in the same mph on the treadmill... is this too much exercise?

I don't think it is too much, however, everyone is different.

I'd encourage you to take a day off at least once a week. This allows your joints to recover (as well preventing burnout).

You may find it beneficial to look at new / different activities. As people do the same activity, their body gets used to it and it becomes less effective in terms of burning calories and promoting fitness. Strive to look for new ways to push the limits (running faster, longer, etc).

But ultimately, I am most worried about your joints not getting enough rest between jogs. I am runner who generally goes about 5 days a week and I feel pretty beat up if I run more than 4 days in a row.

Good luck.

No. Though it's not a bad idea to take one day off. Your body will let you know if it's overworked. If you are feeling tired or weak don't make yourself. Be sure you are stretching after eack run.

well, a person shouldn't run more than 20-30km each week depending on your fiitness level preferably. However, there should be one day of rest each week for your body to recuperate:)
