salmon in oven
here's a very simple recipe, the salmon is very tender that way.
for 4 guests :
- 4 salmon filets
- 2 big courgettes sliced in thin discs
- 4 small tomatoes sliced in discs too
- olive oil
- pepper, salt, dill, thyme, lemon juice or whatever you like
- 4 aluminium sheets
Preheat the oven
On each aluminium sheet, put the courgette discs (in order to make a "bed" for the salmon filets).
Put a salmon filet on the courgettes.
Put the tomatoes on the salmon.
Put some olive oil on the tomatoes, and add whatever you want for taste (I generally use dill, thyme and pepper)
Then close the aluminium sheet. They must be well closed so all the ingredients will be kept in them and nothing will leak.
Then cook them in the oven during 20 or 30 minutes.
Serve it with basmati rice.

Or if you prefer somthing quite different :
Wash and cut an eggplant in small pieces.
Wash and cut some mushrooms.
In a pan, heat some olive oil and brown the eggplant in it with pepper and thyme.
Add some condensed tomato sauce and some hot water (it must cover the eggplant). Add the mushrooms. Let cook slowly until the water is evaporated.
In your plate put on slice of brown flour bread (toasted). On the bread, put some Italian ham. And on the ham, put the eggplant "ratatouille".
It's easy to cook, and very good to taste

And some pasta recipes, it's easy, and people always like them :
Here are 2 very easy pasta recipes I often do when friends come at my place.
Pasta with salmon :
Cut some smoked salmon in small pieces (I use one which is marinated with dill, it's very good).
Make a sauce with cream, pepper, the salmon (and some dill if you use regular smoked salmon)
Cook the pasta (I use tagliatelles for this recipe).
When it's cook, add the cream and salmon sauce to the pasta. Stir well and serve while it's warm.
Pasta with chicken :
Grill some chicken breast filets in a pan. Remove them from the pan and cut them in small pieces.
Put some cream in the pan. Add some mushrooms, salt, pepper. Let it boil while stirring, then add the chicken.
Cook the pasta.
When it's cook, add the chicken sauce to the pasta. Stir well and serve while it's warm.

Simple, quick and healthy? Gotcha!
1 cup uncooked orzo pasta
olive oil to coat saute pan
salt to taste
2 teaspoons fresh basil, chopped (more if using dried basil)
2 boneless/skinless chicken breast, cut in bite size pieces
baby spinach (prefer fresh, but bag frozen works too)
3 or 4 garlic cloves, chopped fine
cup of fresh parsley, chopped
Parmesan, best if you use the real thing and not canned
cook orzo pasta til al dente, about 6 minutes, drain, set aside.
in saute pan, cook garlic over medium heat til brown. Add chicken pieces, basil, salt and cook for about 4 minutes, until chicken has browned and juices run clear.
Add orzo, and parsley, cook til warm and well mixed. Add spinach cook until leaves are wilted and thoroughly warmed.
continue cooking for an additional 5 minutes over lowered heat, stirring occasionally.
Serve, and top with freshly grated Parmesan (its a weekend, splurge on the real thing).
This is a pretty basic recipe, cooking 101, and i have found plenty of variations and made several more myself, but its quick, easy, inexpensive and makes for great leftovers next day (hot or cold). Its fool proof and easy to adapt to your personal tastes.
For variations, try substituting chicken with, fresh shrimp, or eggplant. Also when not so healthy minded, add Alfredo sauce for a richer dish.

Made this for dinner last night--really good, really easy--got it off a recipe exchange online:
Creamy Chicken Casserole
8 boneless chicken breast halves
8 slices "swiss cheese" Gruyere
1 can Cream of Chicken or Mushroom soup (undiluted!)
½ cup (125 ml) of dry white wine or dry sherry
1 cup (240 ml) seasoned stuffing mix crushed
salt and pepper
¼ cup (4 tablespoons, 60 ml) melted butter
Instructions:
Arrange chicken in a greased baking dish and top with the cheese
Combine soup and wine in a saucepan over medium heat stirring until mixed well
Pour over chicken
Mix bread stuffing and melted butter
Sprinkle evenly over the chicken
Bake uncovered at 350 °F (175 °C) for 50- 60 min

We are having teriyaki salmon filets w/ rice and veggies.
We get individually pouched frozen filets, and when I get home, I throw them in a bowl of water to quick defrost. While they're defrosting, I start my rice. You can make a quick teriyaki sauce with soy sauce, brown sugar, a little garlic, pepper and a citrus juice. Orange and pineapple are my favorites.
Spray a skillet with Pam, cook filets over medium/med-high heat for about 4-5min per side, basting with the marinade. You can reserve some to add to your rice or on top of steamed veggies. Yummy and only takes about 20 minutes!

Ingredients:
one pound of ground beef
one onion chopped
one tomato chopped
one clove of garlic chopped
Half a can of Tostitos Medium Cheese Salsa
One bag of Tortilla Chips
in a pan put the onion, the tomatoe and the garlic and saute all the ingredients in a tablespoon of oil. When the onion is tranparent, add the ground beef. Let it cook and add the tostitos cheese. Wait until it bubbles. Put that in a bowl and eat it with the chips.
