Regardless of what people will tell you...no one really knows the EXACT recipe. For instance...the factory where the powder is made, has a special way of keeping the recipe a secret. It NEVER prints it on the packaging. It only gives out the major ingredients so as to inform people that are usually allergic to certain things in foods. So when the shippment arrives at the restaurants...all you see is: Flour, etc. etc. but nothing more.

The closest I have come to making homemade fried chicken that tastes like KFC is useing your normal fried chicken recipie but change the following ingredients
Use "Watkins chicken seasoning" (Its VERY close and very good)
Replace your normal oil with Grapeseed oil (Its better foryou than any oil on the market even Olive oil!) It has a very light taste and doesnt soak into the food and saturate it like other oils (Grapeseed oil is also ideal for useing in cake recipies)

I wish I knew also. I worked for them about 25 years ago and they delivered the flour ingredients already mixed up. I don't know if anybody knows the secret.

The operative word is "secret". No one knows what is in the batter.

Did you notice the word "secret" in your question? Anything that any one gives you is a just a best guess. Not even the managers of the restaurants know that. It is delivered to them already packaged.

KFC FRIED CHICKEN

3 cups water
1 Tbsp salt
2 tsp fines herbs
2 tsp onion powder
2 pkg instant chicken broth
2 tsp seasoned salt
1/4 tsp seasoned pepper
1 cup flour
Cover chicken with mixture of water and salt. Chill in bowl for at least 1 hr. Whirl herbs; onion powder, seasoned salt, instant chicken broth, and pepper in blender. Combine with flour mixture while still wet until thickly coated with flour. Melt enough shortening or salad oil to make 1 inch depth large skillet. heat to 375 degrees. Fry chicken pieces, turning once, 5 minutes on each side. Lift, drain on paper towels. When pieces are fried, drain fat from skillet. Add one cup chicken broth to skillet, add chicken pieces, cover skillet. Cook 15 minutes or until fork tender.
