I'm making sausage, peppers and onions sandwiches for dinner tonight and I'm hunting for a nice potato/rice/pasta side dish to go with it. Not really feeling potato salad or pasta salad. Help!

Broccoli, Rice and Chili Beans

Make it flavorful, and make it fast! It's a hearty skillet chili of bacon, rice and vegetables that's ready in minutes.

Prep Time:5 min
Start to Finish:20 min
Makes:6 servings

6 slices bacon, cut into 1-inch pieces
1 cup uncooked instant rice
2 cans (16 oz each) spicy chili beans in sauce, undrained
1 bag (1 lb) Green Giant® frozen broccoli cuts, thawed and drained
1 cup shredded process cheese (4 oz)


1. Cook bacon in 10-inch skillet over medium-high heat, stirring occasionally, until crisp; drain on paper towels. Set aside.
2. Add remaining ingredients except cheese and bacon to skillet. Heat to boiling; reduce heat to medium.
3. Cover and simmer 5 minutes; remove from heat. Sprinkle with bacon and cheese. Cover and let stand about 5 minutes or until liquid is absorbed and cheese is melted.

Serve With:
Tame the fire from this spicy dish with a crisp green salad that's topped with a creamy dressing, such as blue cheese, ranch or cucumber.


Easy Spanish Rice

The name says it all. You can toss this spicy rice dish together in no time!

Prep Time:5 min
Start to Finish:40 min
Makes:6 servings (about 1/2 cup each)

1 cup uncooked regular rice
1 medium onion, chopped (1/2 cup)
2 tablespoons vegetable oil
2 1/2 cups water
1 can (8 ounces) tomato sauce
1 small green bell pepper, chopped (1/2 cup)
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder


1. Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender.
2. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.

Substitution
Out of garlic powder? If you have garlic salt on hand, use it instead. Decrease regular salt to 1/2 teaspoon, adding more if needed when the dish is done.


Creamy Corn and Garlic Risotto

Enjoy a new version of creamy risotto with corn and cheese.

Prep Time:5 min
Start to Finish:30 min
Makes:4 servings

3 3/4 cups vegetable broth
4 cloves garlic, finely chopped
1 cup uncooked Arborio rice
1 bag (1 lb) Green Giant® Niblets® frozen whole kernel corn
1/2 cup grated Parmesan cheese
1/3 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley


1. Heat 1/3 cup of the broth to boiling in 10-inch skillet. Cook garlic in broth 1 minute, stirring occasionally.
2. Stir in rice and corn. Cook 1 minute, stirring occasionally.
3. Stir in remaining broth. Heat to boiling; reduce heat to medium. Continue cooking uncovered 15 to 20 minutes, stirring occasionally, until rice is tender and creamy; remove from heat. Stir in cheeses and parsley.

Substitution
Arborio rice, a specialty of Italy, creates the creamiest risotto, but you can substitute any short-grain white rice in this recipe.


Creamy Cole Slaw

A creamy cole slaw with cabbage, mayonnaise, and other seasonings.

INGREDIENTS:
3/4 cup mayonnaise
3 tablespoons sugar
1 1/2 tablespoons white wine vinegar
1/3 cup oil
1/8 teaspoon onion powder
1/8 teaspoon dry mustard
1/8 teaspoon celery salt
1 dash black pepper
1 tablespoon lemon juice
1/2 cup half-and-half
1/4 teaspoon salt
1 large head cabbage, finely shredded

PREPARATION:
Blend mayonnaise, sugar, vinegar and oil. Add onion powder, dry mustard, celery salt, pepper, lemon juice, half-and-half and salt. Stir until smooth. Pour coleslaw dressing over shredded cabbage in a large bowl and toss until cabbage is well coated.

Keep coleslaw refrigerated. Coleslaw serves 8.

Try Bolognese Pasta :

You need :
- garlic chopped thinly (remove the core, it's better for the digestion), or onion
- sausage meat
- pulp tomato
- tomato purée
- olive oil
- herbes de province (thyme, basil…)
- salt, pepper

Directions :
- brown the garlic in some olive oil in a pan
- when it's brown, add the meat, and mince it in the pan with a wood spoon
- when the meat is half cook, add the tomato pulp, the tomato purée, the herbes de provence, salt and pepper (taste your sauce to decide what you want to add)
- stir well
- let cook slowly while you cook the spaghetti in some boiling water
- when the spaghetti are cooked, add the Bolognese in the pasta, and eat when it's warm

The sandwiches sound marvelous!

You will want to have light fruit around to help off-set the 'heavy' taste of the sausage.

Now, last night I found myself not wanting regular rice. So I opened some canned tomatos and added a little garlic and taraggon to cook my rice, along with a little water. You could try adding a little diced green pepper along with the tomato too, for color and flavor.

try cooking some pasta and drain. Then lightly cook some onion and garlic in olive oil and pour it over the pasta. simple, healthy and goooooood!

Or, just take potatoes and cut in chunks, spray with cooking spray and coat with a light seasoning and bake until tender.

Your preliminary menu is perfect; that's one of my favorite salads:) .... I think the scalloped potatoes are perfect, but mashed would be good too. I wouldn't do the cous cous, unless you're sure his boss likes it (my husband and son-in-laws DON'T like cous cous) ......Maybe a simple fruit sorbet for dinner (Hagen Daz has good ones)

Main Dishes

Chicken Kebabs

Ingredients
150g chicken, skin removed, cut into 2 cm pieces
1 tomato, cut into wedges
1 green capsicum, cut into 3 cm squares
a little cooking oil

Marinade
2 small onions
1 clove garlic
1 piece of ginger, 1 cm long
2 level tablespoons tomato sauce
1 tablespoon light soya sauce
1 rounded teaspoon curry powder

Garnish ( optional )
1 lettuce leaf
cucumber and tomato slices


Method
1 Pound/ground the onions, garlic and ginger. Mix the tomato sauce, light soya sauce and curry powder in a bowl.

2 Add the pounded/grounded ingredients to the mixed ingredients in the bowl. Stir.

3 Marinate the chicken in a bowl of mixed ingredients. Leave it to stand for 15 minutes.

4. Put pieces of chicken, tomato and capsicum through skewers/satay sticks to make kebabs.

5. Arrange the kebabs on a grilling pan and brush them with a little cooking oil.

6 Preheat the grill on moderately high temperature and grill the kebabs for 5 minutes on each side.

7 Garnish and serve with rice ( preferably yellow rice ).




Side Dish

Fish Cutlets

Ingredients
150g of fish fillet, steamed and flaked
2 potatoes, boiled and mashed
2 small oonions, chopped finely
1/4 level teaspoon salt
1 egg, beaten ( for coating )
oil for frying

Garnish ( optional )
chilli cut lengthwise
parsley


Method
1 Mix the fish, potatoes and salt in the bowl.

2 Divide the mixture into six portions and shape them firmly into round balls. Flatten the balls lightly between the palms of the hands.

3 Heat the oil till hot. Dip the cutlets into the beaten egg before frying them.

4 Fry the fish cutlets until golden brown on both sides. Drain off excess oil on kitchen towel.( You may bake/grill the fish cutlets without coating them with egg.)

5 Garnish and serve.

Alternative
Add 1 rounded teaspoon of curry powder to the ingredients to make the cutlets spicy.





Dessert

Bubor Cha-Cha

Ingredients
1 small sweet potato, skin removed and diced
1/2 yam, skin removed and diced
1 tablespoon flour cubes for bubor cha-cha ( commercially sold )
1/4 grated coconut, water added to extract 400ml coconut milk
50 g sugar
a little salt
1 screwpine leaf, washed and tied into a knot


Method
1 Steam the diced sweet potato and yam until cooked.

2 Put the coconut milk, sugar, salt and srewpine leaf into the saucepan to boil.

3 Add the flour cubes to the saucepan to cook.

4 Finally, add the cooked sweet potato and yam.

5 Stir well to mix and remove the srewpine leaf.

6 Serve hot in individual bowls or cold with crushed ice.

There will be bread for the sandwich, so there is absolutely no need for another starch to be served! UGH!

The fat and grease from the sausage and the calories from the whole sandwich will be way too much. At least try to offset the damage with some fresh steamed vegetables (no butter) or some fresh fruit.

A cold or warm cabbage might be nice. Something along the line of cole slaw or with a hot bacon vinagrette.
