I always seem to cook the same boring things. Any ideas for a simple quick but tasty dinner for tonight to impress 2 children and a fussy husband?!

Okay - I have two teens - one a vegetarian and the other a meat eater so I have the same dilemna!

I boil some fettucini noodles (or spaghetti).
Meanwhile, in a large skillet, heat a tablespoon of olive oil, a minced clove of garlic and saute.
Toss in 1 cup of broccoli crowns and then 1/4 cup of sun dried tomatoes (packed in oil). Then add about 1/4 c chicken broth and 1 tsp. Italian seasoning. Just heat through. Then add the drained cooked noodles. Top with romano cheese. Simple quick and tasty. Serve with garlic breadstick and a tossed green salad.
We like it!

when I've got nothing in the cupboards I find that a spanish tortilla always goes down a treat.

Cut up 1 or 2 potatoes into chunks and fry them in some oil, add anything else you have leftover such as mushrooms, peppers, onion and 4 or 5 eggs. Leave it to brown on one side and then flip it over and slice it in wedges.

Home Made Chicken Kievs are really yummy and a nice salad?

Salad & Dressing

Take two Red Peppers and clean then. Cut them ito large flat pieces as big as you can. Put these on a grill pan skin side up and grill them until they are blackened - this will take 5-10mins. When they are black take them out from under the grill and pop them into a plastic bag and seal them in buy tying a know in the bag or folding the bag over so that the steam can not escape.

Then for the dressing...
Put a good handful of sesame seeds into an oven tray and pop them under the grill for a few mins to toast them.
Then when they are toasted put them into a small bowl.

Then mix 4 table spoons olive oil with 1 table spoon of balsamic vinegar and two tablespoons of runny honey. Stir this in with the sesame seeds. Add a bit of salt and pepper and hey presto - v yum salad dressing.

Now take the peppers out of the bag and peel the skin off them. It's very easy it should just slip off. Chop the peppers into 10p sized pieces and sprinkle over the salad leaves.


Now, For the chicken Kiev

Buy a Boursin garlic and herb soft cheese and 4 chicken breasts with the skin on.

Put your finger in between the skin and the meat of the chicken to make a pocket and stuff a desertsoon full of the cheese into the pocket. Put this to one side.

Take 5 slices of normal white bread and break it up into smaller pieces. Put this into a hot oven for a few mins, remove and crumble into breadcrumbs. Keep doing this until you have nice breadcrumbs. Don't worry if there are a few chunks this will add to the texture.

At this stage Pre-Heat your oven to 180 degrees

Now you need to coat the chicken.

lightly oil a baking tray and keep to one side.

Take three clean plates.
On one put a handful of plain flour and season with salt and pepper.

One the second plate beat one or two eggs.

Put the breadcrubms onto the third.

To coat the chicken roll the chicken breast in the flour to coat it. Then roll it in the egg to wet it then roll it in the breadcrumbs to finish it off.

repeat for each chicken breast.

Place the chicken breasts onto the oiled baking tray and pop in the oven for 25 mins.

Now to serve put the chicken on a plate and Pour dressing over a bowl of mixed salad leaves and red peppers.

Voila colourful and tasty tea lovingly prepared by Mum.!!!

What about chicken stir fry, its easy to do, healthy, tasty & above all quick. I usually buy the fresh stir fry packs from asda + some extra bean sprouts, value chicken breast & a stir fry sauce that I fancy having i.e black bean ( cube the chicken). Dry fry off the chicken in a wok, then add a little oil of your choosing add stir fry pack & cook for about 2 mins then add beansprouts & cooked chicken, then last min chuck in sauce warm plates & serve. voila quick tasty dinner

Well, "simple" to some is very difficult to others however, Fillet Mignon stuffed with Gorgonzola cheese and drenched in a Madeira sauce is one awesome meal and for me, easy to prepare!
If that seems to be a bit beyond your comprehension of "simple" then I would suggest "mac & cheese" as a good favorite that most children enjoy! Just use Cabots Hunters Extra Sharp Cheddar that makes the ultimate mac & cheese in my opinion!

Garlic is magic in the frying pan. 1)Heat the skillet
2) add cooking oil 3)add 2 cloves of fresh garlic until starting to brown.

Then add your chicken, or hamburger meat.

Bake potatoes and add Sea salt wrapped in foil, at 400 for 50 minutes. The Sea Salt makes it taste so good, you won't need butter!

skewered chicken cubes and veggies, in a sticky sweet marinade - grilled in the oven to perfection
some rice steamed with frozen mixed veggies and a piece of butter
and a nice green salad

for desert good old fashioned ice cream and choc sauce with wafers

Main Dishes

Chicken Kebabs

Ingredients
150g chicken, skin removed, cut into 2 cm pieces
1 tomato, cut into wedges
1 green capsicum, cut into 3 cm squares
a little cooking oil

Marinade
2 small onions
1 clove garlic
1 piece of ginger, 1 cm long
2 level tablespoons tomato sauce
1 tablespoon light soya sauce
1 rounded teaspoon curry powder

Garnish ( optional )
1 lettuce leaf
cucumber and tomato slices


Method
1 Pound/ground the onions, garlic and ginger. Mix the tomato sauce, light soya sauce and curry powder in a bowl.

2 Add the pounded/grounded ingredients to the mixed ingredients in the bowl. Stir.

3 Marinate the chicken in a bowl of mixed ingredients. Leave it to stand for 15 minutes.

4. Put pieces of chicken, tomato and capsicum through skewers/satay sticks to make kebabs.

5. Arrange the kebabs on a grilling pan and brush them with a little cooking oil.

6 Preheat the grill on moderately high temperature and grill the kebabs for 5 minutes on each side.

7 Garnish and serve with rice ( preferably yellow rice ).




Side Dish

Fish Cutlets

Ingredients
150g of fish fillet, steamed and flaked
2 potatoes, boiled and mashed
2 small oonions, chopped finely
1/4 level teaspoon salt
1 egg, beaten ( for coating )
oil for frying

Garnish ( optional )
chilli cut lengthwise
parsley


Method
1 Mix the fish, potatoes and salt in the bowl.

2 Divide the mixture into six portions and shape them firmly into round balls. Flatten the balls lightly between the palms of the hands.

3 Heat the oil till hot. Dip the cutlets into the beaten egg before frying them.

4 Fry the fish cutlets until golden brown on both sides. Drain off excess oil on kitchen towel.( You may bake/grill the fish cutlets without coating them with egg.)

5 Garnish and serve.

Alternative
Add 1 rounded teaspoon of curry powder to the ingredients to make the cutlets spicy.





Dessert

Bubor Cha-Cha

Ingredients
1 small sweet potato, skin removed and diced
1/2 yam, skin removed and diced
1 tablespoon flour cubes for bubor cha-cha ( commercially sold )
1/4 grated coconut, water added to extract 400ml coconut milk
50 g sugar
a little salt
1 screwpine leaf, washed and tied into a knot


Method
1 Steam the diced sweet potato and yam until cooked.

2 Put the coconut milk, sugar, salt and srewpine leaf into the saucepan to boil.

3 Add the flour cubes to the saucepan to cook.

4 Finally, add the cooked sweet potato and yam.

5 Stir well to mix and remove the srewpine leaf.

6 Serve hot in individual bowls or cold with crushed ice.

Chicken Chop
Usually we use chicken breast. Bash the chicken breast till flat (about 2cm thickness). Rub the chicken breast with salt, pepper, garlic puree and ginger puree. Let it marinate for 1hrs. Then heat up the frying pan with oil (shallow fry). Cover the chicken breast with bread crumbs. Then shallow fry it till cook. You can eat with french fries and salad.
