ive made sum pizza dough ... what is the best way to keep it as i would like to use it tonight .. is it at room temp or fridge ?

Fridge! Bag it in a ziplock type bag (press air out as much as possible). Store it in the fridge for later.

Take it out about 1 hour before you want to use it; open the bag, and "punch down" the dough [sort of kneed it with your fingers], then close the bag and let it sit to allow it to warm to room temp.

Reason for the "punch down" is to redistribute the yeast through the dough for a better product in the final rise/bake.

Note: You can always make extra dough and freeze it in a similar manner (ziplock) - just bag it twice for freezer storage. Bring it out the night before you want to use it, allow it to thaw in the fridge over night, and follow the 1 hour before steps above.

I made Jamie Oliver pizzas a few weeks back and had too much dough. I wrapped the dough in clingfilm and it was fine kept in the fridge overnight. The pizzas weren't quite as nice the next day but still tasty. I wouldn't leave it any longer as it starts to shrink. Also make sure you cover it completely as any exposed bits go hard. What a coincidence though I'm making pizzas again tonight!

pizza dough will rise, but to slow the process down, pop it in the fridge and take it out an hour before and let rise.It doesnt need a second rise like bread, so punch it down and make ya pizza!

Wrap it tightly in clingfilm to keep all air out and put it in the fridge. Take it out about 30 minutes before you want to roll it out.

You can freeze it equally well too.

i used to make pizza, pop it in the fridge if its a bit dry later when you are ready to use it add a very small amount of olive oil and knead it.

cling flim and then into the middle shelf of you fridge, you should you be doing this now when its fresh instead of being on your computer, enjoy ur pizza, keep me some
