when they made stuffing, they used bread that they had saved and dried out over the course of several months. My grandma would always save the end of the bread in a bag and then we would put it in the freezer until around Thanksgiving time.

To make effective dressing, the bread has to be dried out; that is without moisture of any kind. When you purchase the peppridge farm croutons or Stove top dressing, it utilizes the same principle as what our grandmas used. Dried bread ( some people use cornbread)with seasoning, add a little chicken broth, some seasoning, some celery and a few other secret ingredients and viola! Stuffing.

It was simply a belief that by wetting the bread it would help to provide a more moist turkey after cooking,
and it would stop the bread from stealing moisture from the turkey meat during cooking.

Nothing more complex than that.

It makes a moister dressing (and tastier) dry bread or bread crumbs hence a dry dressing.
