California Avocado Corn Salsa
¾ Cup olive oil
4 Cups fresh corn kernels (about 5 ears)
1 teaspoon salt
¾ Cup freshly ground black pepper
2 fresh California avocados, peeled and seeded
1 large red bell pepper, cored and seeded
4 poblano chiles, roasted, peeled and seeded
4 scallions, white and light green parts, thinly sliced on the diagonal
½ Cup red wine vinegar
Heat ½ cup of olive oil in a large skillet over medium heat. Sauté corn with salt and pepper, about 5 minutes. Transfer to a large mixing bowl and set aside to cool. Cut avocados, bell pepper and roasted poblanos into ¼-inch dices. Add to corn along with scallions, red wine vinegar and remaining ¼ cup olive oil. Mix well and let sit 20 to 30 minutes to blend the flavors.

I make this salsa all the time...
1 tomato finely diced
1 small white onion finely chopped
1 small red onion finely chopped
1/2 green pepper and 1/2 red pepper finely chopped
1 jalapeno pepper chopped
1/2 mango or peach- chopped
fresh cilantro - chopped
tsp white vinegar
tsp sugar
salt and pepper
Mix it all together and let sit for a couple of hours before serving if possible. You can use this as a base and add other things like corn, beans etc... (edit - I didn't see the 'to can' part - sorry)

Anna's Salsa
8 x Roma tomatoes, fine chopped
8 x Tomatoes, finely chopped
1 bn Cilantro, finely chopped
1 med Red onion, finely chopped
1 cl Garlic, minced
2 x Celery, finely chopped
2 sm Jalapeno peppers,or to taste
1 x Green chili pepper, or to taste
1 x Serrano pepper, or to taste
1 tsp Salt
Red cayenne pepper, to taste
Black pepper, to taste
Combine first six ingredients in a large bowl and mix well. Chop the peppers finely and add to large bowl. Mix salsa well. Add the spices (I normally use about 1-2 teaspoons of the spices) and mix. Let chill in refridgerator at least 1 hour for flavor to combine.
Can multiply for larger batches.

You will need the following ingrediants:
3 large onions
6 large bell peppers (green or red or mix)
1 pound of halipino peppers
2 one gallon cans of crushed tomatoes
salt
pepper
Dice the onions, bell peppers and halipino pepers
pour the crushed tomatoes into a large pot and mix the diced vegatables into the tomatoes. Cook on a medium heat adding salt and pepper to taste. Cook to a slow boil and then pour into jars
