Try Chicken Chilli
Its a pakistani chicken stir fry
its lovely and really simple
make a huge salad and some basmati rice or buy some chapattis to go with it
Stir fry garlic slices and green chilli slices in olive oil til lightly browned
Cut your chicken fillets into cubes.. u can also use the wing pieces of the chicken
add chicken to the pan with abt 4 tablespoons good quality soy sauce
add capiscum cubes (use different colours) when the chicken is half way cooked along with 2 tablespoons of tomato puree
allow to simmer
if you find that the sauce is too thin, mix a tablespoon of flour wit some water and add to the pot
garnish with cilantro and serve hot with lemon wedges

2 lbs boneless skinless chicken thighs
1 teaspoon allspice (cloves, cinnamon, cardamom)
1 egg
1 1/2 teaspoons garlic (paste)
1 1/2 teaspoons ginger (paste)
onions, for garnishing
2 teaspoons red chilies (powder)
salt
2 teaspoons all-purpose flour
2 cups yoghurt
vegetable oil (for frying)
12 green chilies
4 drops food coloring (Red)
2 teaspoons cornflour
3 teaspoons lime juice

Mix corn flour, all purpose flour, egg, ginger garlic paste, chilli powder and salt to thick batter.
Add water if required.
Add chicken pieces to the batter and marinate for an hour.
Deep fry the marinated chicken pieces till they turn golden.
Heat 4 tsp oil in a sauce pan and add slit chillies, yogurt, garam masala, red color, little salt and the fried chicken pieces.
Fry for 4-5 minutes and remove from heat.
Add lime juice, mix well and garnish with onions.

CHICKEN BREAST WITH COCONUT SAUCE
2 tablespoons peanut or olive oil
2 tablespoons garlic, minced
3/4 cup Vidalia onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2" thickness
In a heavy bottomed skillet, sauté onions and garlic. Add chicken breasts and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the sauté).
Sauce:
3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 teaspoon oregano
1 teaspoon ground bay leaf
1/2 cup soy sauce (low sodium)
1 1/2 tablespoons sugar
In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.
To Serve:
1/2 cup canned coconut milk
1/4 cup fresh parsley, chopped
Pour coconut over chicken and allow to simmer an additional 20 minutes. Place on serving dish and ladle over with sauce. Garnish with chopped parsley.
Makes 8 Servings, 1 chicken breast per serving.

How about a crab, cucumber and avocado salad in a bed of lettuce with tomatoes and lemon/oil dressing? You can serve it with French bread and butter.

My family loves Chicken breast with melted "margarine " and garlic powder brushed on chicken then grilled.Serve with Mashed potatoes and other vegetables of choice ie...green beans,broccoli.
second choice is chicken Cordon Blue-chicken breast wrapped around ham and cheese(Swiss is best).
