add some chopped coriander leaved and thinly sliced green chillies
dip bread slices in this and fry with a teaspoon of oil per slice

Bread salad is really good and it's beautiful too.
There are different variations, but here is a recipe of Emerils you can try-enjoy!
( I recommend seeding the tomatoes tho-you can also use cherry tomatoes and just halve them-a little easier :) )

4 large vine ripened tomatoes, cut into large cubes or wedges
1/2 pound stale country-style Italian bread, crusts removed and cubed (about 8 cups)
1 1/4 cups thinly sliced red onions
2 teaspoons minced garlic
1/4 cup red wine vinegar
1/2 cup Italian extra-virgin olive oil
1 bunch fresh basil, stems removed, washed and spun dry, turn into pieces
Salt and freshly ground black pepper

In a large bowl, combine the tomatoes, bread, and onions.
In a small bowl, whisk together the garlic, vinegar and oil. Pour the dressing over the bread salad and let sit for 30 minutes at room temperature. Add the basil and salt and pepper, to taste, and toss to combine. Serve.

Panzanella Salad - Bread Salad

Take a loaf of Italian or French bread. Cut it into large cubes and leave it overnight to dry at room temperature. Or you can dry them in the oven for 20 minutes at 300 degrees. Cut 4 large ripe tomatoes into thin slices, 1/2 medium red onion thinly sliced, a handful of chopped olives, 1 cup of good quality Italian dressing (or any vinegrette), 1 sliced cucumber and a handful of fresh chopped flat-leaf parsley. Mix it all together. Season with salt and pepper and fold in the bread cubes. Let sit until the dressing has softened the bread.

Top with grated parmesan cheese. - You can leave this out if you're vegan.

Or ... Spread a loaf of Italian bread or a baguette with pesto. Top with roasted red pepper, slices of tomato, slices of grilled zucchini and fresh mozarella. Top with a little balsamic vinegar.
