The beef you get in the deli is usually "inside round". To make it at home go to your butcher ask for an inside round - season the roast -I usually use salt, pepper, oregano and a little hot pepper flake. Roast in a 350F oven - time will depend on the size of the roast - roast til done to your preference - rare, medium do not cook to well done it will be dry. You will of course need a meat slicer to cut it into sandwich thickness - also remember that the roast will continue to cook once you take it out of the oven so let it rest to let the juices soak back into the meat.

Deli Stack Beef Rollup With Sauce
1-1 1/2 lb round steaks, fat removed from edges, cut in 6 -8 pieces
1 egg, beaten
1 tablespoon water
2 teaspoons mccormick all seasoning
3/4 cup flour or rice flour
2 tablespoons olive oil or bacon drippings or margarine
Deli Stack
4 slices cooked bacon, cut slice in 3 pieces
8 slices deli turkey, cut thin or roasted deli chicken
8 slices deli ham, cut thin
4 slices thin provolone cheese or swiss cheese
Dressing
3 tablespoons Dijon mustard
2 tablespoons brown sugar or Splenda brown sugar blend
4 tablespoons mayonnaise
1 tablespoon sweet pickle relish
toothpicks
Sauce
1/2 (10 3/4 ounce) can campbell beef consomme soup
3/4 cup water
1/4 teaspoon salt

Proceed with caution: References to ingredient amounts, cooking times, and temperatures in directions below have NOT been adjusted (only the amounts in the ingredients list were updated).
Pound each steak portion with meat mallet or a plate.
Note: I use a meat tenderizer utensil with knifes in it.
Put flour and seasoning in a pie pan, mix.
Beat eggs with water and pour into another pie pan.
Dip each piece in beaten eggs, shake the drips back in the pan.
Put each pounded piece in seasoned flour, pound in on both sides. Place on a plate.
Do all pieces once, then if you want to dip a second time, do so. Do not stack the dipped pieces or the coating may come off.
Dip floured steak pieces in egg mixture then, again in flour mixture.
In medium mixing bowl, add mustard, sugar,mayonnaise, pickle relish.
Mix and spread two tsps dressing on each steak. Use all the dressing between the steaks.
Stack on top of each flour, egg dipped steak, the following:turkey or chicken, cheese, bacon and ham.
Roll up and secure with toothpicks at an angle.
Heat bacon drippings olive oil or margarine in large frying pan.
Fry quickly on each side so it is browned.
Place upright in a casserole dish.
In frying pan, pour leftover flour and seasoning, beaten eggs, soup salt and water into the grease or oil. Wisk vigorously. Heat and pour over rolled up browned steaks.
Preheat 375*.
Cover and bake 40 to 45 minutes. Serve with noodles or rice or potatoes.
Note: You can add other vegetables to the gravy if you wish.
