I'm from The Netherlands. Best thing to do is try to find a job connection while you still live in Italy (internet, friends). That will make things a lot easier when you want to move for a permanent stay.

Do you speak Dutch? Most jobs require that you speak Dutch. Maybe the best starting point would be to find a job in an (Italian) restaurant or as a construction worker, and start your job search from there.
As for the documents:
- valid passport
- birth certificit
- proof of good behaviour (from your police)
Once you settle for a job in The Netherlands, you will need to get a Social Fiscal Number (tax department).

Apart from your usual ID card or passport, there are no documents that you need to work in the Netherlands as you are an EU citizen. Freedom of movement of the workers, and all that.
Finding a job and accommodation might be a bit harder. Do you know anyone there already who could put you up in the short term? Or travel backwards and forwards for a short while whilst you sort it all out. It's not that far especially with Ryanair, Easyjet etc.
Are you an Italian living in the UK or in Italy? If you are in the UK, you've already moved once so try to remember how you did it last time and copy that. Buona fortuna!
