stud the chicken with the garlic and any herbs you like,place sliced onions in an oven dish and use it as a platform for the chicken,a little oil and seasoning,cook untill cooked through,mash your potatoes and sprinkle cheese over your brocolli once its cooked till its lovely and melted.

Make a chicken casserole.
Cut the chicken into strips and toss in seasoned flour. Brown it and the chopped onion and garlic in a pan for a few mins. Add a pint of chicken stock (I'm assuming you have stock cubes), and stir it to get all the juices off the pan. Bring up to the boil and put in a casserole dish. Add sliced carrots and brocolli and a sprinkling of your favourite herbs and bake at 180 degrees c for about 45 mins. Throw in a couple oh handfulls of the frozen veg and cook for a further 20 mins.
Serve with mashed spuds, topped with grated cheese if you like.
Alternatively, you could make a chicken curry. Do like above but brown the chicken, onion and garlic in a saucepan. Stir in your curry powder or paste (use amounts to your liking) and cook for a minute before adding stock. If you have a tin of tomatoes add them, or even a squeeze of tomato puree. Add sliced carrots, broccoli and diced potatoes and simmer gently for about half an hour. Add more frozen veg 5-10 mins before serving if you like. Hopefully you will have some rice to serve it with. If not, leave the potatoes out of the curry and do baked potatoes instead.

Id cut open the chicken breasts and stuff them with the cheese onion and garlic throw in some herbs to!! pop them in the oven on a medium heat - then peal and cut the potatoes into small cubes and pop them in a saucepan and bring to the boil. Then put them in a roasting tin with the chicken and season well maybe put some herbs in with the potatoes like rosemary etc!! roast for about 30min or until the chicken and potatoes are golden brown!!
Serve with veg!!
you can also do this with he carrots if your feeling adventurous!!
cut carrots about 5cms long and put in a saucepan up right (kinda stood on there ends) fill the pan with water 1/2 way up the carrots and pop a knob of butter in there. bring to the boil and then cover and simmer for about 30min then take off the lid and turn the heat up slightly and let the water evaporated (this should take about 20min) then once the water has all gone the butter left caramelizes and makes the ends off the carrots all brown and sticky - lovely!!!

Make some potato/cheese fritters grate and shape into little circles and fry you can add onion/garlic to these and a few herbs. Grill the chicken, marinade an hour or so before and serve with some of the frozen veg.

mm, what a feast you have.
Top the chicken breast with some grated carrot,, garlic and onion and some yummy herbs like basil and thyme and wrap it up in Aluminium foil and put it in the oven at 180celcius for about 20 minutes
Make some potato fritters by grating the potato and cheese with some extra carrot, salt, pepper and water and frying them in a tiny bit of oil until brown. They're delicious.
You can top off with some boiled broccoli too.

OMG you have the makings of a great meal!
heat the oven to 350F
Chop the onion and potato and brown off a bit in butter or olive oil remove from pan and put in the bottom of a baking dish.
Slice garlic and put it under the skin of the chicken (if skinless just hold onto it and we'll get back to it) salt and pepper your chicken and lightly dust with flour. Brown it in the same pan but don't cook all the way through. Remove from pan and place on top of the potatoes and onion. Deglaze the pan with 1 cup wine, beer, juice or water (deglaze is to add liquid to a hot pan and stir to get all the yummy bits off the bottom and into your sauce)Bring the liquid to the boil and add to the bottom of the dish. Pop in the oven for about 15-25 minutes depending on the size of chicken breasts and Yum!
If skinless breast are used, place the garlic slices on top of the breast before baking and drizzle with oil to keep it from drying out in the oven

cut the chicken breasts into long strips,
dice the onion,
gently brown in some butter with cujan
do this slowly so all the flavour is absorbed into contents of pan
chop your carrots, remove both ends then cut in half then half again but long ways then slice into strips,
boils for five minutes
put on baking tray and and cooking oil and sprinkly rosemary over the top, cook in oven at gas mark4 for about 35 mins to 40 mins
for your potatoes
cut them in half
boil for about 15 minutes
in a serperate pan melt about 6oz of butter and and garlic which your should finely dice
take boiled potatoes and coat with garlic butter and spinkle mixed herbs on to and put on baking tray and put under grill and a low to medium heat and watch until the potatoes are lightly browned
wa la dinner, not bad for a guy

When browned, add the frozen veg and chopped broccoli and carrots. Cook and stir til the veg are cooked through, and hot.
Do you have any Bisto? Or lemon juice, for sauce? If so, add while the veg are cooking.
Bake the potaoes, and put the cheese on them! ;-))
