Egg yolks are white is correct because we are refering to many egg yolks at the same time which makes it plural.
However if you had written egg's yolk, then the answer would have been is white as it is singular.

both are wrong because an egg yolk is red or you may call it golden yellow or orange sometimes. but we normally call it the red part of the egg, huh?! =)
