it all depends on what you want
starting out chemical and bioengr make the most money.
mechanical is good if you want to later get a law degree and be a patent lawyer.
software is also nice pay but most companies are very harsh to their programmers.
Structural gives you rewards of a job well done by seeing a lasting landmark for decades to come.

firstly depends on what your likes are.
core engineering subjects are Civil, Electrical, mechanical.. these are ever green branches.Although Civil engineers may have to struggle a bit initially
Electronics is quite fetching too interms of job opportunities. and IT sector is currently riding high on a boom so many make the best use of it.
there are other intersting branches also like production(very similar to mech but has more of management stuff) , Automotive Engg (again very similar to mech but more of automobile sutff),then chemical (plastics are ruling the day), Instrumentation (has many subjects common to Electronics) , Bio-technology & Bio Medical which are becoming hugely popular day by day..
besides there there are also fields like Marine engineering and Environment engineering which are emerging as popular choices.
Ultimately no matter what branch of engineering one takes up, it all depends on ones personal interest to pursue a great career in it.
