The ideal restaurant would :
1) Serve quickly - in case the date doesn't work out, you've not left sitting for hours with nothing to talk about.
2) Have a desert menu - in case conversation does go well.
3) Have many things to choose from - you probably don't know what they like and don't like.
4) Has alcohol, if you both drink it.
5) Is near other activities if you want to continue the date afterward - shopping, coffee house, park, etc.
6) Has some ambiance or other thing of interest to start conversations.
7) Is relatively quiet, so you can hear each other talk.
Also, I wouldn't go Mexican unless they asked for it. Too many onions and too many things that can give you gas.
