Butter Cookies
* 1 cup butter
* 1 cup sugar
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour, sifted or stirred before measuring
* dash salt
* 1 teaspoon baking powder
* blanched almond halves
Cream butter and sugar until light and fluffy. Add vanilla. Sift together flour, salt, and baking powder. Stir dry ingredients into butter mixture; mixing until well blended. Shape dough into small balls.
Place on ungreased cookie sheets; press an almond half into the top of each ball. Bake butter cookies at 300° for 20 minutes, or until just lightly browned.
No Bake Grandma Angie's Rum Balls
12 oz chocolate chips
1 cup sugar
6 Tbls light corn syrup
1 cup Rum
5 cups finely crushed vanilla wafers
crushed nuts (optional)
Melt chocolate. Mix in remaining ingredients. Make into 1 inch balls. Roll in confectioner sugar. Add crushed nuts if desired.

I've had the best luck with this one...
Snickerdoodles
3 3/4 C. Flour
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. cream of tartar
1 C. butter
2 C. sugar
1/4 C. milk or cream
1 tsp. Vanilla
2 eggs
2 Tbsp. Cinnamon
3 Tbsp. Sugar
Heat oven to 375 degrees.
First in one bowl stir together the flour, baking soda, cream of tartar, and salt. Set aside.
Second: Mix the 2 Tablespoons of cinnamon, and 3 tablespoons of sugar in a small bowl. Set aside.
Third: Cream together the rest of the ingredients, making sure they are well incorporated.
Add flour misture to the creamed mixture. Form dough into 1 " balls.
Roll each ball into the cinnamon sugar mixture.
Place balls at 2" intervals on a cookie sheet. Flatten each ball slightly with the bottom of a drinking glass.
Bake 8 minutes or until light brown. Cool slightly on cookie sheet before removing to wire rack
to finish cooling.
I use a #40 scoop to make the balls.
I use unsalted butter. Do not recommend using margerine.
Will make roughly about 4 dozen or so cookies.

Mom's Easy Way Blue Ribbon Sugar Cookies
1/2 cup sugar
1/2 tsp. salt
1/2 c. oil, room temperature
1 egg, beaten
2 c. flour
1/2 tsp. cream of tartar
Cream sugar, salt, oil and egg together. Mix together the flour and cream of tartar. Slowly mix the flour mixture into the egg mixture until you can form a ball. Form into balls about the size of a walnut. Grease the bottom of a glass and press the balls flat on a greased cookie sheet. Sprinkle with sugar or colored sugar and bake at 350 degrees for 8 to 10 minutes until edges are brown.

Hi, try these. They are so good and fairly easy to make.
Lemon Bars
4 c. flour
1 c. powdered sugar
2 c. margarine
Sift flour and sugar together. Cut in margarine until mixture clings together. Press into a 9” x 12” shallow baking pan. Bake at 350° for about 20 minutes. Be sure you don’t over bake it.
8 eggs
4 c. sugar
2/3 c. lemon juice
½ c. flour
1 tsp. baking powder
Beat eggs, sugar and lemon juice until creamy. Sift flour and baking powder together and stir into egg mixture. Pour over baked crust. Bake at 350° for 25 minutes. After baking sprinkle with powdered sugar. A sifter works well for this. Cut into bars.

Mexican Chicken Casserole
Ingredients:
-Chicken breast/Chicken Breast tenders(your preferance)
-Stove top stuffing
-Mexican Cheese,cheddar cheese,
-Salsa(mild,medium,or hot)
Preheat oven to 300 or 350(depending on oven)
1-Wash and clean chicken get access fat off. Then season chicken with seasons of your choice.
2-Put chicken in a pan and boil chicken. Not until fully cooked, but almost done
3-Take stove top stuffing and put in a casserole dish and add about 1 1/2 to 2 cups of water. Enough to get all the stuffing wet so that it will not stick to the pan. Then pour your salsa in (1 jar).
4-With a slotted spoon. Take chicken out of pot and place on top of the stuffing.
5-Spread chesse on top of chicken and place casserole dish in oven on 350 degrees.
It is done when the chesse melts and you can stick a fork all the way through the chicken.
