It dries out the food at a very low temperature over along period of time and also rotates fresh air in and the moist air out of the machine so that there is no condensation returning the moisture back into the food. You could also dehydrate food in an oven set to a very low temperature.

the dehydrator will come with a couple of trays, I found out that I needed about six. cut whatever you are dehydrating in equal thickness for best results i had.the dehydrator has a small fan in the bottom and you stack trays one on top of the other,a couple of times a day rotate top tray to bottom ,keep doing that till the apples or whatever you are drying are as dehydrated as you like store in zip lock bags with the air squeezed out.this works great for tomatoes ,watermellon, apples, jerky you name it

They dry foods by sucking the moisture out. This is usually done by using *low* heat, which makes the fluids go to the surface and evaporate, and a fan that sucks up the moist air and blows it outside the dryer and replaces it wih drier outside air (like your air conditioner sucks hot air outside of the house and replaces it wth cooler air).
