I keep reading it in the books I read and I get the general gist, but when I try looking up the actual meaning, I can't find it. Can someone help me out? Thanks!

It means leaving a task until the last possible moment. I was famous (or infamous) for it when I was much younger and in high school. I'd always leave my homework, book reports, projects, etc. until the very last moment before trying to do them.
The results were understandably pretty poor.
I have learned since then , not to let things go " 'til the ELEVENTH HOUR ", and believe me , life is much easier !

The eleventh hour is basically waiting until the very last possible minute.
For example, you live a sinful, godless life knowing that when you ask for forgiveness and accept Christ as your Savior you will be saved from Hell.
One day later in your life you are on your bed about to die. As you say good bye to your friends and family..."the eleventh hour"...you pray and accept Christ as your savior to save your soul from going to Hell.
Another example would be inmates on death row. At the time of their "eleventh hour", right before they are placed in the execution room, they get to see a priest to have them save their souls.

It means that there is no more time for discussing it, or thinking about it. The eleventh hour means that no matter what, you got to do something now or all opportunity to do it will be lost.

It means you are almost running out of time. Rushing your workto meet the deadline very soon. The last minute time. Time is so limited to finish what you are doing.

It means "at the last possible moment" basically or "with hardly anytime left".
