I have been on this kick of roasting veggies with olive oil and, as luck would have it, my oven started malfunctioning and I can't use it anymore. Anybody know some stove-top prep methods that would produce similar results? I can't get the oven fixed for 2 whole weeks!

Just put a little olive oil in a non-stick skillet or pan and stir fry. I like to cook broccoli this way and add a little margarine and fresh lemon! GOOOOOOOD!

You can try steaming them.

Put a little water at the bottom of a pot and the veggies in a strainer and place on top of pot (make sure that the water does not touch the veggies), put a cover on top, and leave them for a couple of minutes. Top with salt, pepper, and butter--yummy!!!

Spray a skillet with pam and cook quickly or for a little different taste put in a bowl with a small amount of water and lemon juice and cover with plastic wrap. Microwave to desired tenderness.

Stirfry, grill or steam them. Steaming won't produce the same results as roasting, but it still tastes good and is a healthier option

get an indoor grill pan and grill them with a lil bit of olive oil or grapeseed oil, be sure to slice em evenly so they cook evenly

you can steam it ..... put water in a wok and place the plate above the water and steam it with oilve oil ... its much more tastier and healthy
